The process is fairly simple, the dried cocoa beans are patched, then the shells removed. They are placed into a mill and ground into a paste. Grounded cinnamon, bay leaves, and nutmeg are added, after which the paste is compressed and rolled into balls.
After, cocoa balls were made, we had a chance to sample locally made chocolate products.
There are a variety of cocoa products on sale from the five chocolate companies on island;
