This participant is compliant and has adopted a 'professional respondent' role. A couple of times she is asked what she thinks, not what she feels. A number of her responses are interpreted through meanings that the moderator brings to the discussion. Her work is framed as "busy" even though her talk does not refer to that experience. In fact she is not actually asked at all what her experience of her work is. And her hiking activities are framed as something "to take care of yourself to keep in shape." But she does not refer to that motive. It's assumed. When she says she might lie about her weight but she knows she should not that is a huge revelation, which is not followed up. It's really hard to see how she has much of a voice here. The product is effectively being fed to her and her feedback is heavily controlled.
She has a feel of responding to a script. Lack of emotion on her part. What about pain points or what she sees working well. What she would like to improve? How she could improve her work process. She seems rather mono tone.
I believe the title is misleading! What is being shown and described in the video is a user test (a.k.a usability test), not a user interview. User interviews are usually qualitative interviews conducted early in the development process to identify user needs. Most of the time, this is long before actually having a product to test! Of course user interviews can be conducted at later stages as well. But the example in the video and the "acts" describes a user test. I think the title should be changed, to avoid confusion.
I wondered whether that was the case as you don't tend to have a prototype developed already to show to users. With that being said, do you know any other videos which accurately show a user interview taking place which could be of any help?
