Hotdog sauce
The H*t G**** Texas Wieners All-The-Way-Sauce
Ingredients: 2 lbs ground beef
2 8 oz cans tomato paste
2 cups water
1 tsp ginger
1 tbsp cumin
1 1/2 tbsp chili powder
3/4 tbsp paprika
3/4 tsp onion powder
1/2 tsp garlic salt
1/2 tsp celery seed
1/4 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
1 tsp ground pepper
2 tbsp ketchup
2 tbsp spicy brown mustard
1 tsp Worcestershire sauce
1 cup finely chopped onion
The process is just as important as the ingredients, so please do not try to rush this.
1) Put all measured dry ingredients above into a small bowl and mix well, set aside.
2) Brown the ground beef while breaking it into the smallest pieces possible, drain most of the grease, leave a little.
3) Add tomato paste and water directly to the pan with the beef, medium heat, combine well.
4) Sprinkle all dry ingredients evenly into beef/tomato paste mixture while keeping a medium to low heat.
5) Add all other remaining ingredients to pan and stir/mix well. Remember, only 1 cup onion goes in.
6) Slow simmer for at least 1 hour, adding water as necessary so as not to dry out or burn.
You are correct, beans don't belong in a chili sauce.

I hail from Detroit (we call 'em Coney Islands or Coney dogs). Which is strange because I've heard chili dogs didn't originate from Coney Island but...I digress. I've found that a can of 'no beans' Hormel chili mixed with a dollop of yellow mustard pretty much nails the 'Coney Dog' I live in AZ now and when I toss that concoction on a dog with a generous sprinkling of chopped raw onion? Like a taste o home, baby! LoL
Nice recipe. I'm a Jersey Boy myself. Grew up on dogs from Texas Weiner l in Plainfield and later Texas Weiner ll in Greenbrook. saute the Onion until tender, add the spices I use Allspice instead of Nutmeg, and saute one minute to bring out the flavor. Now the important part, add the rest to RAW meat, stirring well. The liquid breaks up the meat making it super fine and gives a smooth sauce. No Browning the meat and no blending needed...

As I read somewhere a long time ago. This hot dog sauce has its origins in Greek bolognese sauce. The cinnamon and nutmeg are the giveaway. Thanks for the recipe. I'm going to make a batch this week.

Tip.. open both ends of tomato paste, take off one end lid and push the other end lid through the can.. removes 99o/o of paste!! 😊

i grew up near texas weiners in green brook nj,killer dogs,i found a place called hot rods in glen gardner nj(hunterdon county)that has their own hot dog sauce and they sell it,yeah it's that good on dogs

My mother made a very similar hot dog sauce and she called it Coney Island Sauce. She also put hers though the Waring Blender to get the right smoothness. This stuff is freakin delicious! Thanks for jarring my memory!

Yep! I see a ton of people claiming they are making Coney sauce and their recipes don't contain cinnamon or nutmeg. If you know the history of Coney Sauce you know that it originated among Greek immigrants and if you look leave those two ingredients out you're just making chili sauce and not Coney.

Good recipe. The only way to eat a hotdog is with chili . Hotdog chili is good on nacho chips with cheese too .

I make mine similar but without the cumin and nutmeg. But I will give that a try. Here in SC I’ve also added 1/2 pounds of hot/cayenne peppered whole hog sausage with my 2 pounds of HB. Thanks for your recipe !
Throw a bit of Franks in the mix and you have something close to the sauce we use to top garbage plates in Rochester and Buffalo.
Or...….you could replace the regular ketchup with Heinz Hot ketchup. I love the stuff on burgers.

One other thing is that National Chili is here in my city and they sell a "version" of their sauce to quite a number of different grocery store chains and restaurants as well.

My neighbor worked at the Hot Grill....Grew up on them including Rutts Hut, Libby's, Falls View, The Olympic Diner. The Corral, Lakeview Grill, Teddy's and many more!!!

Yup, I grew up there too. I've had dogs at most of those places. Favorite was probably Falls View and Colonial Grill on Chamberlain Ave. I worked at Colonial grill in Wayne back in the late 70's. It was the first job I ever had at 16 years old. That one has been gone for years, but I think the one on Chamberlain is still there. I haven't lived there for almost 30 years so I might be wrong. Great memories.

Id also like to point out, I you put too much ketchup in it and dont cook it down long enough it will taste differently than it should.

I appreciate you sharing this with us. I'm a Jersey Boy living in the Pacific NW. I miss our iconic Jersey foods. Our hotdog place had a Greek Meat Sauce that was excellent and a part of my food memory bank. This recipe is a lot like that one was. They did not brown the meat first, boild it all up together. They somehow made it really fine grained too. But the taste is very close.

This is very similar to what I believed was the absolute best hot dog sauce except you didn't use any molasses.

Lol....I actually use both mustard and ketchup....growing up it was strictly mustard but as I got older I found a little ketchup mellows the mustard. Where do I mail my man card to....lol

ok if you don't like it sweet when you add the tomato paste add 1/3 of a cup of apple cider vinegar don't add the ketchup. ketchup is made with vinegar, sugar and tomato paste

@@johncampo7634Campo oh and one more thing i do peel the tomato's but I low heat fry the peels in a tablespoon of olive oil it helps make a paste for thickening but that's an old farmers method.

I can't stand Cincinnati-style chili just like Skyline. I wish I liked it because it's so iconic, but the "pumpkin pie" spices make it taste gross.

Throw in some cocoa powder! This is basically Cincinnati style Chili. They put it on Coneys ie chili dogs but also on top of spaghetti then covered in a ridiculous amount of grated cheese.
I like to sautee my onions before adding them to the meat as they'll just be boiled onions in the meat juices. The cinnamon and cumin are a really interesting idea.
My best guess is The Hot Grill on Lexington in Clifton. All the way sauce.
Very close to my Texas Red chili. Missing pablano peppers, and I add the onions and let them sweat down with the meat.
Cant get good hot dogs or pizza in south Jersey, nice recipe.

Alberts hot dogs are the best. I have eaten a lot at parties, motorcycle rallies, cooked em all. Alberts are the best by far. They cost twice as much as the rest but there is a true reason for that. albertsmeats.com/portfolio/ez-open-deli-style-franks/ I don't work for them. Just truth.

Here on the West Coast we also enjoy the tasty tang of hot dog relish on top of everything else.
The 2 cups water is suppose to all be added at once in order to cook down until thickened. This keeps the meat wet and soft cooking apart making a chili “sauce” rather than thicker chili to eat with a spoon. It often takes 2 hours to cook down properly. When done correctly, no blending is necessary. This is a Greek style recipe similar to Skyline Chili.

If you have a Shoprite Supermarket near you get some of their Black Bear Franks in the deli section. This sauce would be excellent on them.

I am always on the lookout for interesting hot dog sauces from the North East. I will give this one a try, it looks good. I have not seen ginger powder used before in a sauce.
Its my understanding the greeks introduced the ginger, cinnamon and nutmeg. Im working on another hotdog sauce like this but have utilized some suggestions from the comments section. It appears the use of the hand blender was drawned upon so Im cooking low and slow until the meat liquifies
@@johncampo7634 Yeah, all the Greek diners where I lived in upstate NY all had their own versions. I recreated one that uses ground up hot dogs instead of hamburger.
Do you remember Snappi Nappi's? They had the absolute BEST Chile sauce I've ever had. It was almost black. I've lookedfor a recreation of that for the longest time. Will give this a try next!

john campo, all together different. This one is made from pork and it’s the best Chilli I have ever had.
I made it for my daughter to sell at a fund raiser and it sold out. She said one gentleman over heard others talking about how great it was and came over to see what all the fuss was about. He warned her he had traveled all over the world and he was doubting yet still curious to try. He only bought one and guess what? He was back for more lol!!!!! He tried so hard to get the recipe but guess what, she doesn’t know it. So he had no luck there. If I knew how to mail u a sample, I’d love to hear your thoughts on it.

I saw a hotdog joint in N Jersey on Diners Drive ins and Dives where they deep fried the dogs to one of 3 different doneness. But i forgot the name of the place. I remember it was very small. Oh yeah, Rutt's Hut in Clifton. The RIPPER!! 🌭🌭🌭

Thurman Hot Dogs are the best. Almost $8 per pound. But all natural casing. No additives and when you bite into the roll and dog it snaps. A Texan who loves east coast chili dogs

You forgot to tell us what the green spice is!!! In the middle left side of the plate! Looks like oregano.

There are too many videos out there of chunky hotdog chili recipes.
Noone really needs to know how to make chili for hot dogs.
It's a sauce, so it should not resemble bowl-chili.
Good video. The next time you make it, try adding a little celery salt and ground oregano.
If it's too sweet add some hot sauce, which has vinegar in it, or just a little straight vinegar
Oh yeah, allspice has the element that gives it the Greek profile. It doesn't take much because it's very potent and distinct. Allspice is a berry which has flavors of cloves cinnamon and nutmeg.
