    Thank you! I lived across the street from a married couple, Brenda is from Easter Kentucky and made this for us for hotdogs for a dinner. Life changing!!! I will have to text her and see her recipe. And I’m going to make this one for my boyfriend to try!

      I grew up in Paterson. We called it chopmeat. Here in eastern Canada we call hamburg and there are no real chili dogs.

    LOL, good to see somebody finally made a video of the recipe I originally posted back in 2009 on Roadfood Forums. I see you verbally changed the 6oz ketchup to 2 Tbsp which is really not critical at all (less sweet is probably better anyway), but you dropped the rest of the instructions after #6. You are aware this recipe is scaled down from the original which was a much larger volume, however I have since deciphered more of the handwritten notes that were on the back (there is a load of them) and discovered 2 other ingredients that were added and two of them above in the recipe were adjusted. There is also a slightly alternate process noted that does change the texture and make it darker. Thanks for not changing it (you actually kept it word for word), I appreciate that, and for not pretending you came up with it all by yourself like I have seen others do on some recipe sites! The recipe was half the battle, I had to figure out the process which was a bit time consuming to say the least. If it's not done in the proper order, it does not taste right. The immersion blender does thin it out nicely but I never got back to the original site to add that info, however you figured that out. Thanks for making the video, and for doing such a great job with it. On a similar topic, there is now a completely unique cabbage topping I am working on and maybe you can do a video on that once it's done.

      Thank you for taking the time to comment. I found this recipe online many years ago and kept it. I dont recall exactly where I got it tho. When I decided to make videos I knew I wanted to include this. I used the hand blender because I was too impatient to let it cook down. Ive gotten a lot of crap for it but to each is own.

    Nice recipe. I'm a Jersey Boy myself. Grew up on dogs from Texas Weiner l in Plainfield and later Texas Weiner ll in Greenbrook. saute the Onion until tender, add the spices I use Allspice instead of Nutmeg, and saute one minute to bring out the flavor. Now the important part, add the rest to RAW meat, stirring well. The liquid breaks up the meat making it super fine and gives a smooth sauce. No Browning the meat and no blending needed...

    As I read somewhere a long time ago. This hot dog sauce has its origins in Greek bolognese sauce. The cinnamon and nutmeg are the giveaway. Thanks for the recipe. I'm going to make a batch this week.

    I appreciate you sharing this with us. I'm a Jersey Boy living in the Pacific NW. I miss our iconic Jersey foods. Our hotdog place had a Greek Meat Sauce that was excellent and a part of my food memory bank. This recipe is a lot like that one was. They did not brown the meat first, boild it all up together. They somehow made it really fine grained too. But the taste is very close.

    My mother made a very similar hot dog sauce and she called it Coney Island Sauce. She also put hers though the Waring Blender to get the right smoothness. This stuff is freakin delicious! Thanks for jarring my memory!

      Yep! I see a ton of people claiming they are making Coney sauce and their recipes don't contain cinnamon or nutmeg. If you know the history of Coney Sauce you know that it originated among Greek immigrants and if you look leave those two ingredients out you're just making chili sauce and not Coney.

    Glad to see you use the blender to make it smooth.
    There are too many videos out there of chunky hotdog chili recipes.
    Noone really needs to know how to make chili for hot dogs.
    It's a sauce, so it should not resemble bowl-chili.
    Good video. The next time you make it, try adding a little celery salt and ground oregano.
    If it's too sweet add some hot sauce, which has vinegar in it, or just a little straight vinegar
    Oh yeah, allspice has the element that gives it the Greek profile. It doesn't take much because it's very potent and distinct. Allspice is a berry which has flavors of cloves cinnamon and nutmeg.

    Looks good! If you want it looser without having to blend it the way they actually do it is not browning the meat add the water and then the hamburger meat and use a potato masher and keep stirring and mashing away and then add the rest of your ingredients.

      Thanks for the suggestion. People are being turned off by the use of the hand blender. Ive received a few comment that I think will improve this recipe. My intention is to do another video utilizing those suggestions. With any luck I may be able to do that this weekend! Thanks again!

    I am always on the lookout for interesting hot dog sauces from the North East. I will give this one a try, it looks good. I have not seen ginger powder used before in a sauce.

      Its my understanding the greeks introduced the ginger, cinnamon and nutmeg. Im working on another hotdog sauce like this but have utilized some suggestions from the comments section. It appears the use of the hand blender was drawned upon so Im cooking low and slow until the meat liquifies

      @@johncampo7634 Yeah, all the Greek diners where I lived in upstate NY all had their own versions. I recreated one that uses ground up hot dogs instead of hamburger.

    I make mine similar but without the cumin and nutmeg. But I will give that a try. Here in SC I’ve also added 1/2 pounds of hot/cayenne peppered whole hog sausage with my 2 pounds of HB. Thanks for your recipe !

    Thanks for sharing. My mouth is watering. The only thing I would suggest is to never use tap water from the sink for anything except washing dishes. You are a doer ... not like most others who are just talkers :)

    Tip.. open both ends of tomato paste, take off one end lid and push the other end lid through the can.. removes 99o/o of paste!! 😊

    My neighbor worked at the Hot Grill....Grew up on them including Rutts Hut, Libby's, Falls View, The Olympic Diner. The Corral, Lakeview Grill, Teddy's and many more!!!

      Yup, I grew up there too. I've had dogs at most of those places. Favorite was probably Falls View and Colonial Grill on Chamberlain Ave. I worked at Colonial grill in Wayne back in the late 70's. It was the first job I ever had at 16 years old. That one has been gone for years, but I think the one on Chamberlain is still there. I haven't lived there for almost 30 years so I might be wrong. Great memories.

    I will make this but no cinnamon, ginger, or nutmeg. I just cant bring myself to use those things to my chili sauce. But, the rest of the ingredients I never had and needed for good chili dog sauce. Thanks for sharing this recipe. I will try this for sure.

    i grew up near texas weiners in green brook nj,killer dogs,i found a place called hot rods in glen gardner nj(hunterdon county)that has their own hot dog sauce and they sell it,yeah it's that good on dogs

      Id also like to point out, I you put too much ketchup in it and dont cook it down long enough it will taste differently than it should.

    I like to sautee my onions before adding them to the meat as they'll just be boiled onions in the meat juices. The cinnamon and cumin are a really interesting idea.

    The 2 cups water is suppose to all be added at once in order to cook down until thickened. This keeps the meat wet and soft cooking apart making a chili “sauce” rather than thicker chili to eat with a spoon. It often takes 2 hours to cook down properly. When done correctly, no blending is necessary. This is a Greek style recipe similar to Skyline Chili.

    Very close to my Texas Red chili. Missing pablano peppers, and I add the onions and let them sweat down with the meat.
    Cant get good hot dogs or pizza in south Jersey, nice recipe.

    Good recipe. The only way to eat a hotdog is with chili . Hotdog chili is good on nacho chips with cheese too .

    Do you remember Snappi Nappi's? They had the absolute BEST Chile sauce I've ever had. It was almost black. I've lookedfor a recreation of that for the longest time. Will give this a try next!

    Don't know how it tastes but it looks the type a sauces here in Detroit.
    I'm going to make it for comparison tasting.
    One other thing is that National Chili is here in my city and they sell a "version" of their sauce to quite a number of different grocery store chains and restaurants as well.
    If you had it maybe you could also give feedback.

      I always use potato rolls because I like how they stay togather and are moist. Most of the times I use Best, all beef, hotdogs but have purchased some of the "better ones" (dont know name but basing better on price). I agree, some dogs are better with chili than others.

    H....G....sauce is definitely looser and flows easier. Can be done using water or stock. I know in the Texas weiner stores, when the sauce thickens due to being on the heat all day, they just add water. Looser sauce allows it to get past the sides of the hot dog down into the roll. Very very important!! This recipe looks good...just needs some water or stock to thin it out.

      john campo, all together different. This one is made from pork and it’s the best Chilli I have ever had.
      I made it for my daughter to sell at a fund raiser and it sold out. She said one gentleman over heard others talking about how great it was and came over to see what all the fuss was about. He warned her he had traveled all over the world and he was doubting yet still curious to try. He only bought one and guess what? He was back for more lol!!!!! He tried so hard to get the recipe but guess what, she doesn’t know it. So he had no luck there. If I knew how to mail u a sample, I’d love to hear your thoughts on it.

    question.... Should you drain the grease.. Before adding any of the spices and tomato sauce, no matter what grade of hamburger you use...?

    I grew up on Jersey dogs....Jimmy Buff`s, Rutt`s Hut (2 Rippers, please :-), Galloping Hill Inn @ Five Points in Union, and the Red Tower on Rt. 22 East, N. Plainfield. All good stuff. My chili sauce is much like yours, but I don`t brown the meat first, just put it in the pot with onions & garlic, then cover it with 1 can of beef broth, and 1 can of water. Sometimes the meat gets tough from browning, so I skip that step. It`s currently 1 am, I could go for some right now !

    Not sure what brand dog your using. I would recommend Thumann's 50/50, 4 to1. They are so good. Loved the video.

      Thurman Hot Dogs are the best. Almost $8 per pound. But all natural casing. No additives and when you bite into the roll and dog it snaps. A Texan who loves east coast chili dogs

    I hail from Detroit (we call 'em Coney Islands or Coney dogs). Which is strange because I've heard chili dogs didn't originate from Coney Island but...I digress. I've found that a can of 'no beans' Hormel chili mixed with a dollop of yellow mustard pretty much nails the 'Coney Dog' I live in AZ now and when I toss that concoction on a dog with a generous sprinkling of chopped raw onion? Like a taste o home, baby! LoL

    John - You mention "The process is just as important as the ingredients, so please do not try to rush this." yet it looked like you put spices in first - recipe reads adding AFTER tomato paste and water already in? Which is correct?

      @@theilliniguy I dont plan on browning the meat, rather just have it simmer in liquid. Will not be using the blender to get it fine....ill just cook it down until liquified

      Yeah, I’m pretty sure you add liquid to the raw chopped meat first. Cooking it that way causes the meat to crumble into really fine bits giving you that consistency you’re looking for. Try using a leaner beef to keep from having to skim away any unwanted fat.
      Former Northeast Jersey guy here currently residing in Northeast PA. Haven’t had an ‘all the way’ dog from Hot Grill in over a decade :/ I miss home! Cheers!

    John,,,this is gonna be the best sauce ever,,a place near us just closed,,,best sauce,,and now I know what they had in it,, QUESTION , you have ten,(10) spices on the paper plate but only have 9 of them,,,did I miss something??? you started with 1 tea ginger and ended with nutmeg and cinnamon,,,what is next to the cumin???? Is that the secret ?? oregano ? Loved all the comments, from so much like Cinci chili to chicken broth, GREAT VIDEO,, now the 10 spice,,anyone know??

      Thanks for your comment. It was pointed out once before that I missed a spice. I apologize and it was unintentional. I believe I missed the ground black pepper.     I saw a hotdog joint in N Jersey on Diners Drive ins and Dives where they deep fried the dogs to one of 3 different doneness. But i forgot the name of the place. I remember it was very small. Oh yeah, Rutt's Hut in Clifton. The RIPPER!! 🌭🌭🌭
