Does veggie seasoning go by another name in asian grocery stores? If I can't find rock sugar, what can I substitute it with? UPDATE 10/16/20: Made this pho recipe and it came out amazing! Very aromatic too! Lasted me enough broth for 5-6 days depending how many bowls of pho you eat per day, haha. Broth didn't come out as clear but it was my first time making pho ever. It was hard to keep a low simmer on my gas stove so ended up over simmering which probably resulted in a murky kind of broth. Broth still tasted great though! I would say not to char too much though because the charred black bits will float off and mix in the broth. Hard to take out even with a mesh strainer. Making again this week!
If you don’t have veggies seasoning, use beef bullion cube. Just use regular sugar instead of rock sugar in fine too just don’t add too much. Might be too sweet
Yeah, if you cover with lid it will make the broth murky. Don’t Char the onion and ginger just bake them until ginger is soft and the onion is aromatic. The broth will turn a lightly brownish color due to the roasted spices Hope it work out for you next time!

I just prepare it for my family members, I personally don’t add lime juice to my pho. But everyone has their own way to eat pho🤗
