Hey, we call this KOKAD right? My mom used freshly grated coconut just the white carefully no adding the brown part, add Cochenel syrup - light pink colour just like urs, sometimes for a change in look and taste and a different colour she used to add some khova too! I
This looks delicious, I'd love to try making it but we don't get cashew nut powder in my country. I have a grinder so can I just grind the cashews myself? And if so do I use raw cashews or roasted? Or can it be substituted with ground almonds?
You can definitely grind the cashew nuts at home. You will have to use raw cashew nuts. Be careful when grinding the cashew nuts. Pulse them just for a second at a time. They could release oil if ground for too long. Yes you can substitute with almond powder but it would change the flavour a bit. Enjoy!

My coconut sweet didn't form and instead broke up into powder, what could be the problem? I guess I cooked up the sugar too much. The taste was awesome though😪
I'm so sorry to hear that the coconut toffee broke up into powder. You are right, the sugar must have passed the soft ball stage and so the toffee became brittle.
