lia yahya Hi, You may use Rice Wine from other country. e.g. Japanese Rice wine , Korean Rice Wine. Buy the cheapest one is fine. If you couldn't find any Rice wine, you may try any wine you have.

Zihorah Husien how do u know its dirty? It might just be a cloth that they've been using for a long time so it looks aged. Using layers of paper towel to dry each chicken is a waste of resources, do people not care about the future of our environment?
because its economical to use a wash cloth that you can reuse than to buy paper towel. Also, she's cooking at home which is more safer than you going to restaurant and eat since you don't know how many hands are touching your foods
at a restaurant, a clean plate is handled by 3 people then it's handled by another 3-4 people before it's delivered to your table. Think about that. And when you order a glass of water with lemon it's handled by another 2-5 people. None of these people wore gloves. They touched themselves. They touched other people. I rather have this lady cooks my food.

substituting with gin is a good idea, as it comes closer in flavor to the chinesse rice wine. :)
