- No one does it quite like Nonna. This antique #lasagna recipe is the ultimate pasta dish with a twist and it will change your life! This #Timballo has been enjoyed by my family for generations, it is created with an almost infinite number of hand-made crepes and filled with mince, cheese, freshly simmered tomato sauce…and a little more cheese. There is only one rule when making this stupendous family lasagna recipe: Add as many layers as you can!
This Italian lasagna recipe is made with lots of love so follow Nonna’s instructions and play a part in the rich Italian tradition of making lasagne for your next special occasion, or just because!

LASAGNA RECIPE
INGREDIENTS: (For 6 pax)
30-35 fresh crepes
3 large mozzarella
200g parmigiano reggiano
600g mixed pork & veal mince
½ onion (chopped)
Extra virgin olive oil
2-4 fresh basil leaves
Pinch of salt
Butter
1L fresh tomato passata
1 x egg for the lasagna filling
METHOD:
1. First, follow my recipe: How to make crepes to make your deliciously light crepes which will form the layers of your lasagne recipe.
2. Dice up 3 large balls of mozzarella into cubes and put them to the side.
3. Put the saucepan on a medium heat and once it warms, add the chopped onion. Let this simmer for a few minutes, then add the tomato passata.
4. Stir the sauce using a wooden spoon and leave to cook for approx. half and hour.
5. Place a medium size fry pan on medium heat and add a drizzle of extra virgin olive oil.
6. Once this has begun to warm up, add in the mincemeat, breaking it down with a fork.
7. Sprinkle a few pinches of salt into the mincemeat and keep breaking it up. Let this cook for a few minutes or until brown.
VINCENZO’S PLATE TIP: Don’t cook the meat for too long or it will dry out. Remember, it will have another chance to cook through in the oven!

This is the closest lasagna I have found to my own Nonna's lasagna. The crepes is something different and maybe there is more mozzarella added in this but the layers and the way it is constructed is very similar. I feel like I know exactly what this tastes like. Heavenly. Bellissimo!

I'm not sure why but this video is so touching to me. I work in a restaurant, I can go to the kitchen and eat whatever I want. But I'm just not happy anymore when I eat. I miss my grandma. She makes the best food in the world. I can eat her food all day long and I would be the happiest boy out there. A lot of chefs cooks for fame and glory. Grandmas don't care about that. They just cook to make kids happy. That's why nothing beat granny's food.

My grandmother was from L'Aquila and we always make her timbalo with crepes at Christmas time. Her recipe uses tiny fried meatballs rather than browned meat, and rather than adding your egg milk custard, she instead uses fresh ricotta dotted around in every layer. Still delicious and we look forward to it as the first course for every Christmas dinner. I love all your lovely pictures of the different towns in the Abruzzo and your lively comments as well.
I love how close you are to your grandma. One of my biggest regrets is not learning how my grandma cooked, she made some amazing foods I’ll sadly never be able to taste again. I’m happy for you man.

@@christinegottino9199 hello! I buy them at a local restaurant called ‘Simply Crepes’. They make them in house every day and they are some of the best I’ve ever had. I think it is a chain, but don’t let that deter you. The crepes are the highest quality. I hope that helps!

In Brazil we do something sort of like this with crepes and ground beef and sauce, except we put a little of the meat and tiny bit of sauce in crepes, roll them up, then put more sauce over top of them with cheese and place them side by side in a baking pan.
