2 cups salsa verde
1 cup sour cream
5 ounces baby spinach, steamed
12 corn tortillas, halved
1 1/2 cups grated Monterey Jack or Cheddar

oh yum! I'm not a vegetarian but when you said "corn and beans" it made me want to make this with corn, zucchini, and poblano filling! this looks way easier than having to roll a bunch of enchiladas, I'm so excited to try it!

I replaced the corn tortillas with cauliflower to keep it low carb and I'm literally dead. This was so good! I hope people serve this at my funeral.

Hilah Cooking I did! I rolled the cauliflower in heavy cream and butter and stuck it in the microwave because I'm lazy. 😂

Hey Hilah! Hope Baby Chef, and the rest of y'all, had a very Happy Holidays. The last time I froze enchiladas, the corn tortillas came out grainy and gross. What did I do wrong? I had it packaged well, and there was plenty of sauce covering the tortillas.

Casserole style=AKA I don't feel like hand-rolling 30 enchiladas style. Although i have to admit i haven't rolled a try of enchilada in over a year. The salsa verde and sour cream in the mixure sounds interesting...I usually chuck a can of cream of chicken soup in mine. I'll have to give yours a try.

hahaha! Omg... you got me with the breasts... lol. PS my family LOVED the Tamales for Christmas Dinner. You totally inspired me. They turned out great but man - one batch, I failed to notice my pot ran out of water... that batch went in the trash because they were smoked... yucky. oh man. Thanks for the inspiration!
