您好,如果你時間充裕的話就可以把麵團放冰箱低溫發酵幾個小時。如果時間緊就直接發酵好後烘烤,我自己用的是後一種方法。
阿栗師傅,我今天做了focaccia,有了你非常清楚的指導,一切都順利只是第二次發酵後放入烤盤時可能油放得不夠多,沾在邊上及底盤很難拿出來。需要經驗。

如果麵包底部有些沾烤盤,可以在案板上塗油擴大麵團一些,在烤盤底部塗好油,在把麵團放進去最後整理一下。

我认真地做了一次,上面铺了芝士,蔓越梅,切小块的火腿片,我的体会是因为芝士是咸的,所以不用后面再加盐,蔓越梅吃的时候会往下掉,是不是铺料时在面团上喷点水可以沾住,另外加点芝麻会不会更香?总之按您的配方做出来很方便,满满的气孔好治愈,谢谢老师!

我不太确定您制作的时候是什么情况,我就以下几种可能因素,希望为您提供一些有用的思路。
最后整形时手指压下去很轻柔,不要太用力。
我的室温大约30摄氏度,第一次发酵1小时,第二次发酵40~50分钟,您也可以参考发酵时间。
发酵不够或者发酵过度,都会导致气泡沉下去。并且我想如果气泡按出来,马上沉下去最大的可能是发酵过度导致的坍塌。
