LOVE Opinel knives, particularly the No. 08's: they are champion slicers and dicers and are light in the pocket.
Another beautiful cook, Andy! FYI for a bit of food nerdetry - masa harina makes the best tortillas! The process to make the harina is that they take the corn kernels and soak them in a slaked lime solution which softens the corn and removes the husk, then they're milled to a flour. In my opinion it makes for sure a superior flavor to the humble flour tortilla.
