I think very highly of Marco and really respect what he's done for meshing musical breakdowns with video game music. He's notably more knowledgeable of music and theory than I am, but I think it'd be great to have a conversation with him some day about it all!
I think your impression on the Fountain's ost is very accurate to this region's story theme. "beautiful yet tense and eerie". Beautiful: the city on the suface. The landscape. Tense: The cold law without compassion. Strict regulations. Unreasonable norms. Eerie: The hidden problems. The masterminds behind the scenes.

The musician wets their fingers and presses on the bowls while the friction that results from it produces sound, it functions just like the cups at the beginning of the main theme. Here's the thing though: they're fragile; Press too hard and they can break and cut you- yeouch!
Sumeru OST was amazing don't get me wrong, but the Inazuma battle theme is still #1 for me. But Fontaine? Man that's a VERY CLOSE #2. It's so good, for so many reasons. Absolutely love it.

I am always so happy to see symphonies get invlolved into this kind of games, it's a way to connect younger people to what is gate keeped by many as niche and sophisticated musical mainstream is disconnected from. EDIT : for clarity.
Very interesting that he had an accordion in his theme, the only instance of it in the game, and then we get to Fontaine (where he appears again), and we hear it again. Now, I don't know anything about WHY he's there because I haven't started the quest yet so don't spoil it, I just think the instrumental association is interesting (because we know they do love telling stories with instrumentation)
For the lack of mics, my guess would be they overdubbed the performance with the mixed version that plays in the game/soundtracks while the actual performance is for show. I think there were several instances in live performances that they do that. Not to say they aren’t actually performing, but it’s something I noticed especially when they had a behind the scenes moments with yu-peng cheng giving feedback live to the orchestra over a stream vs when they have a grand stage like this with cameras all around.
for orchestral performances you don't mic up everyone it does not produce a good recording instead, you put the microphones where the audience would sit and record from there (and very rarely you might mic up one or two instruments or sections so you can highlight them in post but as the audience would not hear that it is very rare to do)
Pretty sure this live performances are the actual sound mic’d overhead while the music videos are dubbed for obvious reasons cause they play outside/on top of a mountain, etc

You can produce several hollywood movies with music included or one Triple A video game. Now that I see they had London Symphony Orchestra playing for them. Yea.. I believe them. Never underestimate the ambitions of the Chinese....

The battle music in the second part was some of the best battle music I’ve heard in awhile
