That looks amazing! Thank you for sharing. Just out of curiosity, how well does a carbon blade like this keep its edge? And are the carbon sheets at risk of delaminating from use?
For all use purpose I’d give it a 4/10. The blade itself is very sharp but doesn’t stay that way after hitting the cutting board. (As well if any pieces start to fret and get in your food you’ll be swallowing carbon fiber shards) 0/10 for that
