I don’t think that chocolate was perfectly tempered though, that’s why it looked a bit streaky on the finished products. I think the problem was that she added untempered chocolate for the seeding part of the tempering process. Usually you add chocolate that is tempered (as it comes from the factories) to promote the formation of the “good crystals”. They did look delish though
@@sarangeonew I mean perfectly was a bit of an exaggeration to make the point that she used to struggle a lot, but now did it in the first go. I have always found it a bit "chicken and egg" though that you need tempered chocolate to temper chocolate 🤔
@raejae5565 you don’t need tempered chocolate to temper chocolate haha, you only need it for this particular method, which is called seeding. There are other methods that encourage the correct formation of crystals without any tempered chocolate, but seeding is one of the “easiest”🤗

I'm gonna be honest, I watch these for the cats as much as I watch these for Claire! I love how the kitties have their own feature in the videos and the editors give the kitties their own background music. I also love how Spud gets his own moment at the end!
They look very similar to the Scottish delicacy of Tunnocks Teacakes, something my grandma always had in her sweet drawer, with the differences being that Tunnocks Teacakes are milk chocolate (though I think they do offer a dark version) with a thinner coating, the marshmallow filling is soft like that Fluff stuff rather than set, and they're a bit taller, but they're oh so good, and I rather crave them now wishing I got some while I was out yesterday... :D
I was just going to mention Tea cakes! one of my favorite treats. We also have a cookie that is sooo similar to this in Canada it's called whippets. They have the addition of a jam under the marshmallow before the cookie.
I was going to say the same thing!!! Love a good teacake (though I'm more of a caramel wafer gal), I was so excited to see something similar in the thumbnail. According to Wikipedia tunnocks teacakes were created in 1956, so I guess this is technically an earlier version (although I think the idea of putting marshmallow on a biscuit and covering it in chocolate is probably quite widespread and I doubt anyone was copying anyone)

Wow!! Claire nailed this one; when she broke open that first one after tempering the chocolate and enrobing the cookies and it snapped so perfectly I literally gasped I was so impressed! I love this series so much and this episode is especially enjoyable for the simplicity of the product and how effectively Claire replicated and improved on each element
Canadian Whippets actually predate Mallomar, as they were introduced in 1901. They were originally called Empire biscuits. They're from Quebec. We also have Viva Puffs, which are the same thing, except there's also a jam layer and milk instead of dark chocolate. And Wagon Wheels have the marshmallow between two enrobed cookies instead of piled on one.

Thank you for the nostalgia! My mom would pack Mallomars in my lunch box when I was a kid. I'm now 73 and live in NC, so it's been a VERY long time since I've had one. Maybe I'll try to make some for my grandkids. 💕

Wow I grew up on these! I told my grandma I liked them once in passing and she held onto that and sent me packages filled with them for years. Loved this one. Amazing editing and Claire moments as usual, always just what I need!
I always look forward to a new Claire Saffitz video. Her videos are the *perfect* thing to watch in the morning while I sip my coffee and sit under my SAD light during these fall and winter months. I always appreciate how she is able to teach baking theory and technique while making it seem accessible and unpretentious.❤
The reason they didn’t sell them everywhere, was because they would melt during shipment. They only sold them in the south during the winter months, but far more frequently in the northern states. So those in the Northeast are more familiar with them.
I've heard some people with stocked up on them in the winter and freeze them till summer. When they rebooted That 70s Show into that 90s show which takes place during the summer I saw enough clips without watching series at all that on one of the kitchen shelves in the background was a box of Mallomars.
Moon pies resemble a malomar like a mud puddle resembles the ocean 😂. My mom would buy moonpies and they sat in our house for years uneaten with 3 hungry teens in the house.
At this point the Mallomar availability is more of a marketing thing than a matter of practicality, like why McDonald's doesn't have the McRib year-round even though they very easily could.
Love your confidence in this one! I remember on test kitchen how hectic it got when you had to temper chocolate! It's kinda surreal watching you now, fully confident throughout the entire process, including tempering, which is something you've stated was your weak point many times! ☺️ Those look really yummy, too!

Bc I live in Indiana, my only experience with Mallomars is when Harry is eating them at the end of the movie in When Harry Met Sally and he calls them the best cookie ever. They look amazing and Claire, you knocked this one out of the park!

These were a huge part of jewish holidays growing up, my grandfather always had them in the fridge when they came out. I recently moved to the deep south and you cannot find them here anymore. I'm looking forward to making these myself and being able to carry on my families small holiday tradition.
I'd love to see you do some more savory Claire Recreates! First things that come to mind are: Olive Garden Breadsticks, Tostinos square pizza, or slim jims!

They look like the belgian Melocake. We learn how to make them in baking school 😊 Here we don't necessarily temper the chocolate, we use mycyro (cocoa butter). There are so many ways to customize them , they're great! Love your attention to details ❤

I love this channel... twas really saddened by the whole "BA blow up" thing because all of the great synergy and culinary ideas seemly vanished, so when Claire (our house fav) popped up with her own channel.... We were overjoyed. Today we literally made the Pumpkin Pie and the Pie Crust.... *** [never made a pie before] it has 2 more mins left and then we have to wait for the cooling down of the pie.....sad ( hate waiting...) I can't wait for the next hour to pass so we can eat this delicious looking pumpkin pie! Thanks for all that you do Claire and team - Y'all are the best.
We had the usual, turkey (turned out great, moist, tender, juicy,) mashed potatoes/gravy, green bean casserole, dressing, etc. But my favorite was the butternut squash (from our garden) mashed with a little butter, S & P, and a touch of maple syrup, then topped with pecan/pepita brittle (made with maple syrup, EVOO, sea salt and pepper,) it was so delicious! Very excited about this, I have been gluten free due to celiac for a bit over 2 years and I miss them so much, especially now that it's "Mallomars season." I've been thinking about how I could attempt to make my own...but now I'll be able to just follow this! (Well, for the chocolate and marshmallow haha)

Sept 2nd - 3rd week Mallomars appear on shelves in grocery stores. Special pricing for a week. Favorite of Dad’s during his lifetime. 3 boxes in freezer for my brother 1/1/25. 😁
Hi Claire! In Canada we have very similar (if not the same) cookies, Viva Puffs and Whippet Cookies. They have been around at least since the 70's, when I grew up. They are now available with all kinds of fillings but used to be the standard chocolate covered marshmallow topped cookie. Wishing you and everyone at Dessert Person a Happy American Thanksgiving.

We have similar cookie in NZ/Australia called a Mallowpuff
mallomars are actually made (but not sold) in Toronto. it says “made in Canada” right on the box.
It made me genuinely so emotional seeing Claire nail this tempering, I vividly remember in the BA days when tempering was always a nightmare.
I’ve watched just about very “Gourmet Makes” and “Claire Recreates” and this might be the most spot on remake!

Today we literally made the Pumpkin Pie and the Pie Crust.... *** [never made a pie before] it has 2 more mins left and then we have to wait for the cooling down of the pie.....sad ( hate waiting...) I can't wait for the next hour to pass so we can eat this delicious looking pumpkin pie! Thanks for all that you do Claire and team - Y'all are the best.

We had the usual, turkey (turned out great, moist, tender, juicy,) mashed potatoes/gravy, green bean casserole, dressing, etc. But my favorite was the butternut squash (from our garden) mashed with a little butter, S & P, and a touch of maple syrup, then topped with pecan/pepita brittle (made with maple syrup, EVOO, sea salt and pepper,) it was so delicious! Thank you for great videos and the inspiration to try new things. Happy Thanksgiving! Gobble Gobble :)

Very excited about this, I have been gluten free due to celiac for a bit over 2 years and I miss them so much, especially now that it's "Mallomars season." I've been thinking about how I could attempt to make my own...but now I'll be able to just follow this! (Well, for the chocolate and marshmallow haha)

Sept 2nd - 3rd week Mallomars appear on shelves in grocery stores. Special pricing for a week. Favorite of Dad’s during his lifetime. 3 boxes in freezer for my brother 1/1/25. 😁

Hi Claire! In Canada we have very similar (if not the same) cookies, Viva Puffs and Whippet Cookies. They have been around at least since the 70's, when I grew up. They are now available with all kinds of fillings but used to be the standard chocolate covered marshmallow topped cookie. Wishing you and everyone at Dessert Person a Happy American Thanksgiving.

Although I have been a vegetarian for almost 20 years and marshmallows are not vegetarian friendly, I still won’t miss any Claire’s videos.
I didn't know there was a name-brand version; basically every grocery store I've gone to only has a store-brand version and they're awesome
