    You have used terms like resistance starch which sounds new. Al these days other fellow doctor youtubers have used term Glycemic index which is the rate at which the food become as glucose in blood. So it is high even the GL is high in potato. But you say potato can be adding glucose still slowly to blood. Sounds contradictory. I am sure you have the right explanation. In short what is GI, GL, Resistant starch. Pls explain more clearly with respect to potato

    I am told by Drs. that among the starchy vegs potatoes have high starchy matls.
    So avoid potatoes.
    But you state is in contrast.
