Your each video adds great value . Very well balanced explanations ensuring that chemistry jargons are not overwhelming. Always felt it’s better to watch them rather than watching flood of recipes videos although both are quite different types. Hope to receive such good content. Keep it up sir 👍🏻
Krish, my wife is deserting me for a week on a trip to Malaysia and Singapore. So thanq. I will now eat a week old chapatis with a more guiltfree mind. Jai ho fridge ki!
Trick is to no loose the humidity in the rotis. We do the following things at home. 1. Make the dough little more soft (by adding little more water). 2. Flash heat rotis on both sides, to not stick to each other in storage. 3. Flash freeze them in freezer to stop steaming process. (Not more than 2-3 minutes, step 1 is to compensate for this) 4. Store them in ziplock for longer shelf life in freezer. Usage 1. Thaw frozen rotis for 5-10 min at room temperature. 2. Pan fry them and serve.
Wonderful to know this. I have been freezing rotis for some time now. I started doing this to keep my rotis for a week or more. They taste just as fresh after microwaved, much better than refrigerated rotis. So, i always store them in freezer, even if its for the next day. However, I didn't know the science behind this until now 😊
Wonderful to understand the reason behind why freezing works for bread/roti. Thank you! Along with bread, we also freeze any leftover cake (yes there is such a thing if you end up with multiple cakes on any occasion). Best to cut it in serving size and then freeze. To enjoy one after weeks Or even months, simply get one piece out and let thaw at room temp. Best midnight snack (for lactating mothers or anyone else who needs to keep up their calorie intake while taking care of other humans).
Cake idea is really good. I'll give it a try next time. By the way, midnight snacking is not good for health. Your body doesn't need food or calories after sunset. Not even healthy snacks like carrots/Cucumber. It causes more damage than good. Watch Dr. Pal's videos, if you are motivated to know more about eating and sleeping according to circadian rhythm 😊
@@kasturi2666 Agree with you on that, and hence I mentioned lactating mothers. Trust me, my caloric needs sky-rocket during these early weeks when I am waking up in the night to feed my infant. Speaking from experience as a second-time mom :)
We keep bread in freezer and it's always fresh and heats up just fine and even toasts well. I have not tried Roti yet, malabar paratha freezes very well.
Just came accross your channel while browsing RUclips.. Loved the command and confidence in your language to explain stuff.. Please make a video on Desi Cow A2 ghee and Normal ghee available in the markets.. Off late lot of setups hv started selling ghee claiming they have desi cow farms and they provide real hand churned bilona ghee... Ofcourse they are selling it at much steep prices... I want to know if they are genuine or is Desi cow ghee is truly superior to the normal ghee.. Thanks
Been freezing bread and directly toasting it since a long time, best learnt hack it was. You'd think it will lose its fluffiness but surprisingly that doesn't happen too, once toasted its almost unrecognisable that it wasn't from a fresh pack, I've been freezing for weeks many a times crosses a month too, eaisly.
Thanks for the video. I did try freezing rotis in the freezer but they came out quite hard. Any tips on how to get soft rotis or how to store them would be appreciated, thanks
What is there to bust? It's a high calorie snack and best consumed in moderation given lack of fiber etc, but for working class folks, it provides carbs, fat and protein. People like us must try and consume along with some vegetables so it is more balanced.
Thank you very much sir, this is an extreme value add for our left over chapatis and rice. Is there any tips on how to store the leftover atta mixed with water.
No. That will primarily dehydrate rather than retrograde, so you can just add water before using. It might also oxidise slightly on the surface (darken) so use an airtight container

Is it ok to take frozen chaptis as is in tiffin bix, eat after 4-5 hrs, by when they would be at room temperature..maybe they will get some partial hear from the hot sabji packed alinside ? Any issues with glucose spikes ?
@krishashok thanks for quick response. Yes, after seeing your video my idea was : cook chapati in evening, extra for next day lunch box, keep in deep freeze and pack with freshly cooked Sabji in morning...can save time to make chapati in morning haste.
Your picture with a person holding the stomach seems like it is bad for health, whereas it is the opposite. You could also have said that it becomes resistant starch.
Noted! My longer videos on RUclips are generally spoken at a slower pace. The shorter 90 second ones were originally shot as Instagram reels, where a higher speed is preferred given the short duration. I just re-edit and post them here for completeness
I'm glad you said the freezer. I don't understand why people keep bread in the fridge. In the freezer it is as fresh as the day you bought it!
Indeed

I make the rotis the usual way - fully cooked and freeze. Then microwave for 10s. Adjust time accordingly if you have more rotis. No hassle.
Except for the making of dough , he literally mentioned all other points 😅

Thanks Krish from Belgium. I keep sliced baguette in the freezer and then toast it when needed. Leftovers become delicious bruschetta. Cheers.

It wont! Retrogradation doesn't happen below freezing temperatures
Superb tip for students like us living abroad! Thanks!
Thanks, Krish. Going to try leaving a few slices in the freezer to see how this plays out. Also, why does the same logic not appy to cakes?

Will retrogradation happen to uncooked kneaded atta dough of we keep it in fridge?

Which is the best option for freezing - cooked roti or half cooked or unrolled dough?
Freeze cooked roti and refrigerate uncooked dough

You are cooking the chapati right? If its then packed airtight, then spoilage can be minimized. We have all taken tiffin boxes to school, so calm down

Hard to predict. Will depend on temperature, humidity etc
