The problem with your first sail being so distant and isolated is that weekend sails are going to seem like such hard work. A test of passion for James. Don't end up funding your local Marina.
James, I am a bubble head. You know what that is you know what we are. I am in Kings bay. You were a quartermaster I was in ft. Our rates worked side by side. I'm older than you are by a pretty good bit but we probably crossed paths in Kings bay and didn't know it.
I haven't any where near your experience, but found that flying the spinnaker without the main up is prone to creating a disaster. When the wind comes up, you have nothing to blanket it with. Even if the boom is going to bang like crazy, I'd rather have the main up so when we turn away to douse the spinnaker we can hide it behind the main and de-power it. Feels safer for a family living aboard

Wow James that brought back some memories...July 23,1976 I sailed through that gap to St Georges, Bermuda. My first real sail adventure, three of us on a twenty eight foot Trapper, England to Madera then Bermuda and on to New York, five thousand miles. We found Bermuda with a plastic sextant and a Timex watch, exactly on course for the east end of the island. Happy Days! Thanks again, Aloha, David.

Easier to furl the spinnaker with the jib stowed. If the wind were heavier we would have used the main to mask the chute while we stowed it, but in light wind you can do it either way, whatever is easier for your boat and your setup. Good question, Tony. ;)

"your projected route to the UK?" pretty sure he said he was delivering the boat to the med, and he mentioned he's headed for the Azores, so Bermuda -> Azores -> Portugal/Spain/Gibraltar would probably be the route
