This is PERFECT for my mom - she loves everything coconut, definitely going to make this for her!
Suggestion: Instead of heavy cream I think it would be awesome to whip up some canned coconut milk (The semi-solid stuff on top of the can makes an awesome "whipped cream" substitute).

I'm in Puerto Rico, the birthplace of pina colada, so this sure got my attention! That's exactly how it is: the perfect marriage between pineapple and coconut. And that's exactly how it's served: with the marrasquino cherry on top. I'll have to try this recipe!
