Produce glue or not, it depends on the white fungus,there are two types,the soft one and the crispy one. Both are great just depends on personal preference. If you use the crispy one it will not produce glue even if you cook it for days. That's why I always ask the seller before buying. You need to check the lotus seed even if it's stated coreless there will always be some with core and the soup will turn bitter if it's not removed. That greenish thing floating on the surface is the lotus seed core I believe this soup has a bitter taste. Actually this is pretty easy to cook I use pressure cooker or slow cooker depends of the time I wanna spend.
U hv missed out one step in the lotus seed. Some viewers may not know. The pitt in the lotus seeds need to be removed or else u will get bitterness when eating the lotus seed.
