You promised to show how to spot the fake ones. You failed to deliver on that. Instead it was a long commercial for this particular olive oil, and a bit of information about differences, but nothing that the regular consumer could check (such as how long the olives spent being transported). At the beginning you showed 3 olive oils you deemed "fake" as you were pouring them. So the expectation was that one could recognize fake olive oils by sight.

Good information! I have a little olive grove in southern Italy with 40+ trees. Cockatoo sounds great and looks like they make a lot. I was bit taken aback by the waste of the pulp as I am sure they could get more oil from the pulp but maybe they have a really good system. From my trees, I can get maybe 200 litres on a good year with the traditional cold press. My local press guys really do the traditional method. The olives are crushed by big stone wheels and then the pulp is pressed between hemp type disks by a hydraulic press. Then separation of oil and water by centrifuge. Two points in the video not so clear; The criteria for Extra virgin olive is the acidity. Other factors are not really taken into account. But if you have followed the rules: 1) clean olives 2) Greenish not overripe olives 3) No damaged or diseased olives 4) The minimum time from picking to press

Very good points, thank you! I have yet to taste olives and olive oil like what we had in my childhood 60+ years ago in Syria, likely the home to the oldest olive trees in the world. I wonder if the modern milling/production techniques have something to do with that.

@@madaboutvoice More than likely! There other ways of collecting oil from pulp. Another typical modern way is: If you dip a stainless steel in the crushed pulp, the oil sticks to the metal and then you brush it off. Repeat again and again. This will still give good quality oil but you lose the body. Oil using mechanical pressing is much thicker and deeper in colour- especially as soon as it made. In fact- this oil should be left for it to settle. We get a little waste in our oil because of the deposit which we typically filter and make soap! Also depending on the type of olives the taste/colour can be very different.

25 years ago I was living and working in Portugal and they kept all their cheeses in their local olive oil with some peppercorns and a few olive leaves. You would use the oil for salads and spreads. It was semi solid even at room temperature with chunks of olive fruit and had a fruity quality to it. You simply can not get an olive oil like that here in Canada..
Olive trees were plentiful around everyone's home. When the olives were ready to harvest they would lay cloth under the trees and beat the olives off the branches with a stick. They would pick out the bulk of the twigs and leaves, then take it to the local press where each family's harvest would be weighed. They had ancient old stone presses to make the oil, and all the olives would go in. The resulting oil would be distributed per weight to each family in accordance with the weight of olives they had brought.
I still think about that olive oil and how delicious it was.

I'm from Belgium but i lived and worked in the Catalan region of Spain for 11 years, in a region (El Priorat), where it's mainly wine and olive oil production, so I'm quite familiar with it. The harsh truth shone through in this little documentary here, just as it is worldwide; you almost have to know the farms themselves in order to know if it's the real deal or not, just like with wine, the same. All the rest is blah blah blah marketing strategies, unless , just like this family, it's done by heart, dedication, honesty and hard labour.

Every year we produce our own oil (for the personal consumption of the family), just like the majority of the neighbors there (a lot of people have vines for grapefruit and to produce wine instead of having olive trees).
That oil is more viscous, it's of a bright green color and it's a lot tastier (even a bit spicy) than the regular oil you might end up buying at a supermarket.
That type of oil is called "green gold" because of how valuable (and expensive) it is.

The best way of harvesting on Corfu Island is still with a donkey.
They lay out huge nets under the trees and collect the full nets with the donkeys. It is very hard work and it takes more time than a harvester needs.
Just remember, harvest early in the morning and press the oil on same day to keep the olive oil fresh and healthy.
Harvesting trucks need streets and they cannot drive uphill and downhill and between narrow trees.
The olive farm in the film had trees planted in a row with at least seven meters between the rows. No naturally grown trees in this film. It is a commercial for an olive farm.
This kind of space between trees is not in a naturally grown olive wood on corfu.

The problem there is that the claim would have people believe that EVOO is the best to cook with. The problem comes from the cook. Burning an oil is very easy, and its better to use an oil that has a higher smoke point for most amateur cooks. Would be great to see a comparison between several higher smoke point oils and EVOO, just to see what different temperature ranges actually do to the chemical structure.

Wonderful video, Joel, thanks for sharing. Like you, I used to believe the myths and lies about industrial seed oils being 'heart healthy'. Of course, as a student on a tight budget, the low cost of so-called vegetable oils helped in steering us towards the massively profitable, unhealthy options.
While many people think nothing of spending big on beer, wine or whisky, they balk at the notion of paying a fair price for a litre of olive oil that, as your short documentary explains, is a very time, and labour-intensive operation.

Over a million small farms were established in the US last year. This isn't covered in the news at all from what I've seen, but I think it means at least in part that people are beginning to take steps away from the established broken and corrupt food supply chains. Bottom line, the best way to eat well is to remain close to the source. Learn to cultivate plants, hunt and fish, buy directly from farmers in your area. There is no shortage of high quality food. It's just that the grocery store is more and more a place to avoid.

This inspired me to do my own taste test with the 2 EVOO’s I keep at home. One is quite expensive and I use it like medicine, taking one tablespoon each day. The other is a little less expensive, but not cheap, and I use it in cooking. The more expensive oil has a very pronounced peppery taste with a bitter finish. The other has a peppery taste that is a little less pronounced and I got an unpleasant chemical flavor. Guess I won’t be buying that less expensive oil again. I also put a small dish of each in the fridge to chill…we’ll see how that turns out.
Wow! The refrigerator test showed the less expensive oil as more solid. The expensive oil was mostly solid but with a ring around the outer edge that was fluid. If I understand correctly, the less expensive oil is more pure! I guess price isn’t a reliable indicator of quality.

Great info. The same adulteration goes with virgin coconut oil as well. Brands blend in refined coconut oil with a hut of virgin coconut oil to get the smell. The refined oil that's blended in has to be heavily bleached to match the colorless profile of real VCO. I know what happens in the industry as we are producers of the best quality virgin coconut oil, and the prices most brands buy from manufacturers is is simply so low that it's impossible to produce at those rates.

Many thanks for the information on Australian Extra Virgin Olive Oil, Joel! Now, how about a trip to Italy, to see how they grow and produce their Extra Virgin Olive Oil! It terrifies me, every time I start a new meal requiring Extra Virgin Oil, because of its ever-increasing price of it in our English Supermarkets! It is out of the price range of most shoppers now! I used to use it for frying, but now I only use Rapeseed oil/Vegetable oil for frying, and only spare tiny drops of Extra Virgin Olive Oil for my various Pasta, etc meals! Can someone just answer these basics: 1. What makes an olive oil not "real" according to this video? They talked a lot about what makes a "good" olive oil, but I only heard one kind of vague explanation about what makes an olive oil not "real" (just adding a few drops of olive oil to other additives), but not how it relates to this 70% is fake figure. 2. If something is labeled "extra virgin olive oil" and that is the only ingredient listed, is it not just the oil from olives? In what way would these EVOOL's be "fake"?

      Chemical extraction

    • @marten595
      @marten595 Год назад +2

Fake is a very misleading term here. Studies have shown that 70% of olive oil doesn't meet the "international requirements" to be labeled as EVOO. That doesn't mean they are fake, it just means that they aren't given the distinction of being highest quality. Essentially, they failed the "extra virgin" portion of the test. They still qualify as olive oil.
Most USA-produced chocolate doesn't meet international standards for qualifying as chocolate. It's actually illegal to export it to Europe because of this. Again, that doesn't mean its fake, it simply doesn't qualify for international standards. (The EU requires milk chocolate to be at least 20% cocoa solids while the US only requires 10%)
I'm sure that cold-pressed olive oil is of a higher quality than most brand-name store-bought oils, but the rhetoric (fake, additives, chlorophyll + beta keratine) used in this video to make that point is misinformation. 70% of store-bought olive oils ARE NOT seed oils with a few additives.

The olive oil we can find in Portugal and Spain are a huge contrast to what we usually find in markets in most countries I've been. The real good quality olive oil becomes noticeable the moment you open the bottle. The nice aroma fills the room. The taste and texture only come to confirm you are experiencing something special. In the US, I am yet to find that quality. Even the imported ones I buy from Spain can't compare. They are very expensive and decent but nothing like what I experienced in Europe. If by "completely wrong" you mean that it failed the fridge test, then it may still be exactly what it says it is. That part of this video was just promoting an old wives' tale that was debunked long ago. In fact, adulterating EVOO with a little bit of cheaper, more saturated or waxy oil would result in it being much more likely to _pass_ that test, not fail it. There are no simple proofs of it being what it says it is since authentic EVOO will perform differently depending on olive type, growing conditions, when and how it was processed, how old it is, and other factors. The best way to ensure what you're getting is to find and source it directly from the grower or grower's distributor, with the season, best-by date, and all details that make sense printed right on the bottle.

Thank you for making this video; it was very enjoyable & educational!
Recently, I've learned about all the bad oils out there that, here in the States, have been promoted as "healthy" over the past decades. I am now changing my ways and choosing to buy the "good" oils: Olive, Avocado, Coconut. However, I am wondering if there are light versions of these oils that are good.
The reason for this is that there are certain foods that I don't want the strong flavor of the fruit to come through in the recipe. Is there a "cold-pressed" version of light olive oil that you would consider "good" or is there another oil that you would recommend to avoid a strong presence in the food? I've tried cold-pressed extra-virgin avocado oil, and that works OK, but I would like an even more subtle presence.
Any help on this would be greatly appreciated.
    God bless you

Real olive oil is made at the mill, by slowly pressing olives (the freshly harvested fruits) after they mature in a special preparation for weeks. This is how it's made, and the pressing is made at room temperature ("cold pressing") from fruits and nothing else. If you want olive oil (the only that stands), there is one and only one way to go : the mill.
This is how it's done in Spain, Italy, France, Tunisia, Marocco, Greece, Cyprus... for there has been no other way for about 5000 years.

You're spot on about the health benefits and the importance of cold pressing in maintaining the integrity of the oil. The process we use in our family-run farm mirrors the careful, traditional techniques you've explained, enabling us to preserve the richness of flavors and health benefits.
It's unfortunate that many consumers are misled by fake or adulterated oils in the market. That's why it's so important to build awareness and help people understand the value of genuine, high-quality extra virgin olive oil. If possible, buying directly from a trusted source or producer can make all the difference.

A few years ago, a friend of ours who has about a hundred olive trees invited us to participate in the harvest.
At that point, and for the previous 15 years or so, his trees were free of ANY chemicals, and grown on rain and ground water alone, (no irrigation)... they still are.
In such small groves, harvesting machines and private processing plants are not a viable economic option, so we harvested the olives by hand with a few other friends and members of the local community, took it to a local processing plant, and were rewarded with a portion of the organic, cold pressed olive oil that we've helped make... which lasted us that entire year.
This was an awesome experience, and since then, we've been doing that every year, taking a week off whatever it was that we were doing, and making olive oil for ourselves, our family, and our friends.
If you get the opportunity to do something like that, I highly recommend it.

i have a friend in Greece who takes care of olive groves for elder pensioners who are to old to care for, he harvest their olives, takes them to the press, filters at the press and then when he takes it home. The oil he produces is like nothing else tasted. He always states, do not use it to fry, only on salads and cooking no high temp frying, so you can get the most from the taste. Frying is for the other olive oils. Cant wait till l go back and buy more oil.

Thanks so much for this most informative mini-documentary. I found it very interesting to hear not only from this family operated Australian small company but also from the Italian producer of Extra Virgin Olive Oil as well. I found it very interesting regarding using the refrigeration test on the Olive Oils to test their quality, something I would have had no clue about otherwise. I will most certainly be sourcing my olive oils far more critically in future, secure in the knowledge that "you get what you pay for," usually!

My grandparents used to have a small field with olive trees and every summer all the family would get together and spend a week picking up the olives by hand and then my grandfather took the olives to a press were they extracted the oil from the olives and he would distribute the olive oil with my mother and my aunts and uncle so we always had good olive oil.

Being that I grew up in Greece, and we make our own olive oil as do the farmers around us, and having tasted vast amounts of olive oil I can honestly say.. Taste wise ...you're totally OK with standard store bought extra virgin olive oil... If it's green and bitter spicy you're good to go

Brilliant short doco mate. Gave a fantastic insight into how Olive oil is made and what to look for. Great story about a wonderful company.

The chill test is what I always go by. Think of all those salad dressings that claim to be made with EVO. You put them in the refrigerator, and they don't turn to gel. Look at the ingredients. Usually soybean, and vegetable oils. Look before you buy. However, Italy alone, geographically, can not produce enough Olive Oil to supply the worlds demand. "If it don't gel, things ain't well." Hopefully all that beautiful olive pulp goes into a delicious Tapenade.

I'm making my own olive oil from about 50 trees on Adriatic coast. Almost each individual olive is hand picked and cold pressed. It is traditionly used more than 1000 years in the area and debate about frying on it still exists. Traditionally it is used for cooking and salads, but it starts to smoke much faster than sunflower oil when trying to fry in it. I've tried few times just to make kitchen full of smoke.

Thanks for the information. Now I live abroad, and I hope to find this product in Canada someday. In Lebanon, many of us olive farmers sell our olive oils organically fresh to the areas within the country, and we bring some fresh olive oils home. We also follow the same techniques as the Italian man had mentioned. Put the olive oil in a fridge, and look for traces of thick butter like residue on the bottom of the lid. Another way to compare is to look for the consistency of the liquid and colour accuracy, which is a bit more complex to do. The main way to spot the difference is to taste the store bought olive oil compared to the farm home processed olive oil. Their is that rich, unique fatty taste that you get in organic fresh olive oil that you don't get many store bought olive oils.

Most people really cant afford the high prices for quality so we all go to the grocery store and get what is on the shelf and that works for me BUT I used it in the Restaurant biz years ago an it is amazing. Great video thanks.

It was not literally mention or show how to spot the fake..I thought it's like honey that you can put some water and you can see some form of figure evenly or something like that..how could we know it comes from small farm as you said..it's easy to mark anything..

The farm is so beautiful. Where is it in Australia? Extra virgin olive oil can be used for stir frying and baking? Always had the idea it's only meant for salads told by some dietitian.

Thank you for your very interesting and informative video. I often pay attention to various oil bottles in stores and wonder, if I am buying the real stuff or not. I have never seen oil products from your company here in northern Europe. I have been lucky to spend several years in Italy, where I truly learned to enjoy good olive oil.
    All the best.

Loved it! Have been researching a lot about this matter. I really appreciate your simple, concise, and accurate information on how to find an authentic product from a devoted, and honest olive oil producer. In fact I put some olive oil in a glass, then in the refrigerator last night, the oil is still in liquid form 24 hours later. I will try the olive oil from Cockatoo Farms for sure. BTW congrats on winning the Choice reward!
