While maybe not as famous as the band's lead singer at the time, Bill Berry from R.E.M. quit the band to live and work on his farm in Georgia after a brain aneurysm nearly killed him. I was going to say one you left out was Cameron Diaz, who retired from acting following 2014's Annie until you showed that ET clip. She actually has three upcoming films, including Shrek 5.
You could have spent a whole segment on Grace Kelly instead of just mentioning her in passing. She made 11 films before leaving Hollywood behind to marry Prince Ranier of Monaco. Three of her films were directed by Alfred Hitchcock, who spent the rest of his career trying to find someone of her caliber.
You could have included the three male children from Step by Step. Following that series, Brandon Call and Josh Byrne had no more acting credits, and Christopher Castle voiced a character in four episodes of a TV series.
There's also Ted Wass, who played Mayim Bialik's father in Blossom. Following that series, he became a director and didn't appear on screen except for one episode of Bialik's third sitcom, Call Me Kat.
Portia De Rossi has retired from acting and reluctantly reprised her role as Lindsay in Arrested Development.

Like when one is talking to a reporter/etc, the other looks at the twin that's talking and watches them (their eyes look at all parts of the other's face the whole time). I've always wondered why they do that.

He was awesome in Young Frankenstein. He asked Gene Wilder if he could be in the movie, but didn’t want to be in the credits. And the line about making espresso was totally ad libbed. Gene Wilder almost ruined the scene because he was trying so hard not to laugh.

Mara's last film role in child acting was Lily Stone in Thomas & the Magic Railroad - while she did have a wonderful time on the film having been a huge Thomas and Shining Time Station fan and the fun experience on set in the Isle of Man and Toronto, those same aspects of how Hollywood was treating her was still taking an effect on her, hence she took her leave from acting until voiceover acting in Big Hero 6: the Series.

I don’t think Seagal has planned to go anywhere anytime soon. He’s just been busy being a cop, dog trainer, helicopter pilot, a green beret; blues player; chef and painter for 40 years.
