Grey around the yolk is a sign of being overcooked. The yolk should be soft set but I know a lot of people don't like that, which is unfortunate. Once I tried a "jammy" yolk, done right, I never went back to hard set folks ever again. The crumbling texture leaves something to be desired.
Whether it's overcooked or not, at least people like me is enjoying every steps, it depends on the person eating it and not the complainants, I like it when it so cooked but if in stew for the next day, I hate it.
