    THE MOST DELICIOUS OKRA STEW: ARMENIAN RECIPE, HEALTHY VEGAN MEAL

    HOW TO MAKE OKRA STEW
    INGREDIENTS
    1 pound of okra or 1 package if you are using frozen okra
    1 cup of vegetable oil
    1 cup of precooked garbanzo beans
    1/2 medium size white onion
    4 cloves of garlic
    3 small eggplants
    1 small green pepper
    1 small red pepper
    1 small yellow pepper
    You can use colorful peppers or whatever you have on hand
    2 cups of crushed canned tomato or fresh tomato
    1 tablespoon of tomato paste
    4 cups of water
    Wash and dry Okra. Add to a preheated cooking pot and shake it or steer it until the liquid evaporates. Add 1/2 cup of vegetable oil. Continue frying the okra. Add 1 cup of precooked garbanzo beans, onions, garlic and continue sautéing. Add the eggplants and another 1/2 cup of vegetable oil. Shake it make sure the eggplants are covered with oil and it is cooking. Add the tomato and season it with salt, red and black pepper. Squeeze some lemon juice. Add 4 cups of water. Turn the heat up and bring it to boil. Once it starts to boil turn the heat down and simmer it for another 20 minutes. Your delicious okra stew is ready. Wait for 30 minutes and serve while it is hot. You can serve it with a pice toasted bread or any kind of pilaf.
