A good response to that is making up a lie like "my Husband/wife/etc is in there right now" this helps by making it seem like you're not alone and gives a valid excuse as why you can't use it besides the obvious not wanting a stranger in your house.

Story 1: No way is the OP a jerk here. This doesn't sound like an entitled Karen to me... sounds more like a crackhead to me. I've had "bathroom emergencies" in the past where you are pretty desperate to find a toilet, but i have never once acted like this, where you just push past someone in their own home and then say you've over-reacted when you called the police or security. OP did the right thing here, because who knows what that lady was actually doing in there. Story 2: Well, the bf DID warn the OP on how crazy and clingy Mexican mom's are.... and it turns out he wasn't kidding. It really sounds like the bf is working a ton of hours/day here and it sounds like he's really burnt out, both with dealing with work, and his parents. His family really do sound a bit overbearing and dont seem to care for the OP at all. It really sounds like the mom is one of those women that thinks the OP is trying to "steal her son" away. If i were the OP i would've either re-considered the relationship at that one family BBQ, or made a good effort to learn Spanish, because they know she doesnt speak much Spanish and used it to their advantage in badmouthing the OP. As for the constant phone calls, i would've either just ignore them or block her number. Story 3: OP is not a jerk at all here. OPs wedding, OPs rules, plain and simple. I throw more mud at the parents then i do Jen here really. They spoiled her absolutely rotten growing up. While its good that she had a better life when she got adopted originally, but they literally revolved anything and everything around Jen, including the OP's birthday parties growing up. At some point she starts coming across as the usual liberal and expecting other cultures to adapter to her instead of learning to adapt to her SO's family dynamic and find that balance that respects everyone.
Facts. The more she wrote, I kept expecting an actual slight to happen, but then nothing ever did. She told the mom she could call her if she ever couldn't reach her son and was angry when it happened.
