I made this this weekend and it was BOMB! My anti vegan son smelled it, opened the pot stole an “oxtail” and was convinced that it was real meat! He asked me how did I take the bones out and after realizing it wasn’t meat ran around the house exclaiming How I’m involved in sorcery! All that to say it was a hit! I used jackfruit as I have yet to master the king oyster mushroom thing. Thank u sistah y’hear?!

I had to wing a lot of this recipe because your website is down but omg. The texture is so similar to oxtails. I had to use frozen spring roll wrappers because my store was out of rice paper. I used ox tail seasoning from my local meat market for the mushrooms and seitan. And i just made a gravy instead of stewing. But it was still soooo good. My niece took it apart to try to figure out why it was so meaty and fatty.

This looks so good!!! How do I make sure that my seitan mix isnt so gummy? I attempted to make ribs the other day by mixing the wheat gluten with water and cooked jack fruit but it was gross so I'm scared to use it again. Can the rice paper method also be used with other recipes?
You need to be on chopped! The creativity is out of this world! Imagine anyone else using oyster mushroom on this level? I am part Filipino and Black so I have the benefit of having experienced oxtails in many ways. I’m thinking 🤔 you may be able to utilize fruit pectin and a seaweed derivative similar to agar to achieve the fatty texture. The meat part is easy shrooms & rehydrated chickpeas

Thank you so much, I did recently move those recipes to my ebook so they are only available there. The sofrito was a simple blend, cilantro, parsley, culantro, cubanelle peppers, plenty of garlic, red bell pepper, onion, jalapeños (which are optional).
Ok I'm new this this , where do I get there full recipe? Can I use a different type if flour (splitpea)to make my oxtails? I'm looking forward to trying but what the exact ingredient measurements .
You can find the full recipe in my cookbook. As far as substitutes there isn’t a flour that has enough protein to mimic the vital wheat gluten flour, but I have a gluten free version of this recipe coming that is pretty formidable.

I also had some mushrooms left over King oyster mushroom that I brown stewed with butter beans kind of like my twist on butter beans and tripe or butter beans and cow foot with brown rice rice and peas so good thank you so much

Hi Korren! Your recipes look absolutely amazing. I was trying to fix you first recipe that you did for Jamaican stewed oxtails, but saw on your blog you took the recipe down. I had saved it and wanted to try it. But had trouble with my computer and lost the recipe 😣😖😫😢😭. Are you writing a book or have you done away completely with it? Would love to have all of your recipes in one place old and new and willing to pay for them.
Chickpea flour is excellent, if your sriram is troubling you, whisk in a 1/4c chickpea flour to your seitan before you add any liquid. Make sure it’s thoroughly mixed in. Then add your seasoning liquid have an additional 1/3 c of liquid on reserve to accommodate for the chickpea flour. Your dough should be much easier. That’s in ratio to about a seitan dough using 1-1/2c it vital wheat gluten. If you add more chickpea flour, your mock meat texture will be a little less meaty and more loafy if that makes any sense.

Yes there is... it just takes a lot to make it’s called Burmese tofu. It doesn’t have any soy, it is made with chickpeas. But I don’t know how well it holds up to heat. I’ll have to test it.

Absolutely, I would say prepare your jackfruit shreds just as you would your mushroom shreds and use the same process

Over mixing gluten with out chickpea flour or baking powder will give you that end result. Watch my 101 video on mock meats.

Can spelt flower or chickpea flour be used in place of Vital Wheat Gluten?
I would like to know this too! I haven't had any luck with vital wheat gluten?
Chickpea flour is excellent, if your sriram is troubling you, whisk in a 1/4c chickpea flour to your seitan before you add any liquid. Make sure it’s thoroughly mixed in. Then add your seasoning liquid have an additional 1/3 c of liquid on reserve to accommodate for the chickpea flour. Your dough should be much easier. That’s in ratio to about a seitan dough using 1-1/2c it vital wheat gluten. If you add more chickpea flour, your mock meat texture will be a little less meaty and more loafy if that makes any sense.

Yes there is... it just takes a lot to make it’s called Burmese tofu. It doesn’t have any soy, it is made with chickpeas. But I don’t know how well it holds up to heat. I’ll have to test it.
