DELICIOUS LEMON CUPCAKES WITH LEMON BUTTERCREAM FROSTING
Cupcake Ingredients:
1/2 cup (115g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
2 large eggs, at room temperature
1 and 1/2 teaspoons pure vanilla extract
1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (120ml) whole milk
1 and 1/2 Tablespoons lemon zest
1/3 cup (80ml) fresh lemon juice
Lemon Buttercream Frosting Ingredients:
1 & 1/2 cups Icing Sugar
1/2 cup butter
1/2 TBS lemon juice
1/2 TBS milk
Bake for 18-22 mins at 350°F (177°C). Makes around 20 Cupcakes!
