Cheese Stuffed Mushrooms
mushrooms 1 lb (450g)
clean the mushrooms with a wet towel
gently scrape out and discard the mushroom gills to make room for the stuffing
you can peel them or not
olive oil 2 tbsp
red onion a small one
salt ½ tsp
black pepper ¼ tsp
cook for 4 min. or until most of the moisture is out
2 cloves garlic, minced
cook until fragrant, 1 minute
breadcrumbs ¼ cup (30g)
let toast for 3 min.
let cool
grated parmesan ¼ cup (23g)
cream cheese ½ cup (115g)
freshly chopped parsley 2 tbsp
grease the baking sheet
sprinkle with parmesan
Bake at 400F (200C) for 20 minutes
