Absolutely fascinated and pleased to know that Spain/Madrid is the 2nd largest seafood market/consumer in the world after Japan! That means there's a plethora of Spanish seafood recipes to dive into and I am ready for it! I would've guessed it was China!

I tried this dish with a German couple and they mentioned this was a Spanish dish and learned how to make it there. I am Mexican and I would order “camarones al ajillo” and it was completely different - the taste was just not it! I’m so happy I found this, can’t wait to make this fabulous dish! Thank you so much!!
My family lived in Brindisi Italy and we lOVED THIS GARLIC SHRIMP!!! Never thought Id find it again. It was in the 70s when we lived there❤️❤️❤️❤️❤️Thank you sooooo much

Love this dish but at home we have induction cooker top …. Could this be done in a sauté pan then transferred to the terracotta dish and finished in a very hot oven ?
Hey I have a question. When I follow your recipe, the garlic gets burned (brown, dry) by the end of cooking. What can I do to keep the garlic not burned?
We are in Majorca chef , i had to come and revisit the channel to see how some of the food we already ate can be made once we are back home to Canada 😂

Hi Omar, in the city Mijas I have experienced several restaurants using white wine in their Gambas al Ajillo (it's written in their menu). I want to try adding white wine to your recipe, but I don't know when I should add it or should I let the alcohol evaporate?

As soon as they hit hot oil, they will turn pink and done. Maybe lower the heat so the garlic/chili flavor has a chance to infused in them. (The thing with shrimp is the longer you leave it there the tougher it gets. Nothing will happen but when they are overcooked they shrink more cause all the water is evaporating. If you are planning to do a lots, then I would do one small batch first- like a handfull. Then another one and another, so you get more learning experience an a good idea how long they need hit that right spot.)
The name pil pil on gambas it's misleading. Pil pil it's a recipe that you can only cook with a few white flesh fish, such as cod, monkfish... I don't know when and why some people and restaurants started calling it like that. I hope that explains

Totally agree with you, and here un Spain it’s unusual to see the prawns without tail, but it is optional. But nice recipe and so much easy!
