Welcome back!. The three most important things for us seniors is consistent practice, developing the hand to ear connection and keeping it simple. It doesn’t require hours a day, but every day. Sing everything and don’t get bogged down with theory

Good questions. Octave displacement is jargon for moving a note or notes in line by an octave. In the video, it's a descending scale and the last three note are played an octave higher. As to leaving out the 5ths in chords, check out this video. ruclips.net/video/5qdhzbdZq40/видео.html
Compared to approaches that require chord scales or arpeggios for each chord, two notes is simpler. It’s not necessarily easy and it’s not what I teach beginner jazz guitarists
Good stuff. One critical observation: Your voice is a little boomy. My hearing has declined a little, and I don't hear highs as well as I once did. If you were in closer on a good mic the sibilants would make it through to my old ears and your wise words would register better. That aside, your video gets a like from me. Stay after it, man.
Getting closer to a cardioid mic would have even more bottom due the proximity effect. I use a de-esser to reduce sibilance, but I’ll look into using a bit of high shelf. I don’t hear much in that range anymore so it’s hard for me to know what effect it has
