    From an article about Swedes in Chicago:
    "At the turn of the twentieth century, Chicago had the second largest Swedish population of any city in the world; only Stockholm, the capital of Sweden, had more.
    The Swedes gave us the log cabin, built Wrigley Field, and founded the Walgreen's drugstore chain.
    After the Great Chicago Fire in 1871, so many of the city's carpenters were Swedish that for a long time it was said that "the Swedes built Chicago." They came here with little more than hope and determination. They retained the spirit of their homeland, and yet formed the backbone of the city. As they prospered, so did Chicago."

    Hm... gravlax is not really made with aquavit, and usually the process takes longer than 2 days.
    Cold smoked salmon is usually served with dill potatoes, not gravlax.
    Like others have written, the gravlax should be served with "hovmästarsås".

      2 days is enough for gravlax and gravlaxsås is what you need and dill potatoes is also okay (different parts of Sweden have different rules)

      Gravlax, as well as smoked salmon, is served in many different ways in Sweden. Nothing wrong or untraditional with enjoing some dill potatoes together with your gravlax. Rememer that both these salmon dishes are traditionally found on a smörgåsbord where potatoes boiled with dill also are common.

      You have no idea what you are talking about. Dillstuvad potatis is a classic condement to gravlax and really common in Skåne. And to add a bit of akvavit is also classic. Not historical accurate but no gravlax is today.

    Serving gravlax without hovmästarsås?
    Blasphemy!
    For those who don't know, hovmästarsås is an emulsified sweet and sour mustard sauce with dill. It's pretty much an essential part of a gravlax serving.

      what???😂Swedish/Norwegian is still "Scandinavian" and Denmark is a country, and Scandinavian (but I don't know if that restaurant has any Danish dishes)
