Max’s restaurant is awesome. They have a wide range of menu items to choose from. They’re all Filipino dishes, which I think is great, considering there’s more tourists who are interested in giving Filipino cuisine a try. I hope you guys had a fine dining experience. *The best halo-halos for me are in the provinces. The ones in buko, they're called buko-halo. The halo-halo ingredients are literally placed in a semi-opened young coconut, allowing you to also scrape off the coconut meat while mixing the halo-halo. Sometimes the resto/place already has the coconut meat scraped and mixed with the halo-halo, so all you need to do is eat the whole thing.*
You guys are getting good at using the spoon and fork the Filipino way. Excellent job! Lumpiang Ubod or Fresh Lumpia is made of bamboo shoots filling. I have no idea what the wrapper is made of, I'm guessing cornstarch or something but it's Fresh Lumpia is one of my favorites. Also, Filipinos treat Pancit as a main dish. You will find Filipinos eating Pancit and Rice as pair. Leche Flan, another one of my favorite Filipino dessert, is made of evap milk, condensed milk, egg yolk (or both yolk and white), caramel syrup (melted sugar), and vanilla extract. It's possible that the lemony taste was vanilla or perhaps they intentionally put a drop of lemon or calamansi in it.
The wrapped dish is called fresh lumpia, the inside has fresh veggies. The sauce that I remember eating fresh lumpia with is pineapple sauce with peanut.
You may wanna try eating Max’s fried chicken next time with Jufran banana ketchup (it goes well specifically with the Jufran brand) mixed with some drops of Worcestershire sauce.

Good you were able to try Max's one of the clasic restos in the the Philippines. The usual dip for the chicken is a mix of banana catsup, Worcestershire sauce and hot sauce. You also had fresh lumpia ubod. Ubod is the pith/heart of a coconut tree which tastes like turnip. You should also try Savory Chicken which is competitor of Max's Chicken.
Calamansi or lemon zest is added to the leche flan to remove the eggy smell we call it "lansa" the bad smeel from the egg... It's not fishy but usually the smell comes from the yolk
For me the best halo halo is from digman in Cavite . Its so creamy. It has coconut milk & so delicious. I love Max ' s fried chicken & beef kare- kare. Try to eat also Reyes chicken barbeque dip in peanut sauce. Its so yummy. The leche means milk . It made of egg yolk, sugar & milk. Did you already tried Lechon & Lechon.paksiw?
What you mistake for potato is called ubod which is the heart or the pith of a coconut palm located at its topmost part where young palm leaves shoot or sprout.It's naturally sweet. Unfortunately,a coconut tree has to be felled to harvest the pith so that's a precious coconut pith spring roll you are having.🙂
OMG 🐓Max's chicken is best eaten with a dipping sauce made of the condiments on the table - banana catsup, hot sauce and Worcestershire sauce!!!! OMG You guys missed out SOOOO MUCH!! (1)Lumpiang Sariwa as opposed to (2)Lumpiang Shanghai which is deep Fried and served with either Banana Catsup or Sweet and Sour Sauce or as opposed to (3)Lumpiang Prito (Fried) which is filled with veggies mostly bean sprouts and served with Spicy white Vinegar or Vinaigrette. Use bottled water or go to the refilling station to get filtered water. Tap water is clean but for precautionary measure, we boil it first.

Thats Lumpiang sariwa with Ubod (not Potato)(center of the Trunk of a coconut tree, much like Bamboo shoots and served with soy peanut sauce. (1)Lumpiang Sariwa as opposed to (2)Lumpiang Shanghai which is deep Fried and served with either Banana Catsup or Sweet and Sour Sauce or as opposed to (3)Lumpiang Prito (Fried) which is filled with veggies mostly bean sprouts and served with Spicy white Vinegar or Vinaigrette. That's Lumpia 101 for you.

That is NOT turnips. They said Lumpiang Ubod. "Heart of Coconut" which is ubod is different 🤣
Heart of palm is a vegetable harvested from the inner core and growing bud of certain palm trees, most notably the coconut
Turnips are "Singkamas". "Ubod" is from bamboo shoots or coconuts.
