I always enjoy your videos on what you eat in a day. I have been a vegan for many years, but I eat very different meals than you do. I mostly eat Mexican or Italian-inspired recipes. Molly, your right about sauces and vinaigrettes, with Vegan meals, its very rare i use them, because the content is flavourable and delicious as it is. The amount on the shelves in supermarkets is astonishing (peoples meals must be awful 🤣🤣) to have to cover them up. Lol. Also lovely smoothies….i often have green cabbage left, and i do a green smoothie. Handful of green cabbage leaves, one peach, one banana, chia seeds, and about a cup or more of water……lovely… cant taste the cabbage at all if you balance it out….you should try it. Hi Molly I was a vegan for 5 years. I'm 95 percent still plant based but now I do eat fish once a week and eggs from a local farm. I just being changing up my diet do to digestive issues. I would love to try some of your meals but I can't to spices or certain foods anymore. My diet is very bland. Thank you for sharing. Aways enjoy your videos. 😊
I can relate as I have a sensitive tummy and intolerant to certain foods, including spices like chilli and paprika. It can be tricky but sometimes I find food can taste lovely just itself :)

Love this type of video. Plus the fact that you make it seasonal, such a good thing to do. Since giving up coffee I’ve discovered ceremonial cacao ( made with oat milk) Particularly good for women and feels nurturing and tastes wonderful.
They call them Budda Bowls here. I think it's a great idea!! I made a vegan sushi bowl once. Same basic idea only with rice & served with pickled ginger & a soy sauce dressing.

Chia seeds have to flown in too. A more local alternative (better for the climate) would be flax seeds or psylium. Same great source of omegas and same gel-like properties!

I make ours and leave it in the fridge and then just eat it how it is...... delicious for warm summer mornings :) I find it always fills me up well and never need to snack either ...... a plus :)
I like your snack bar. I make a similar protein bar and keep in the fridge a few weeks. Great, good snack when I need one and I can keep at the low-sugar level that I need. Beats paying $3 for a store bar too! 🌱
I visited Nairn last month and was so scared because I'm a picky eater and thought it would be SO hard to be vegan in Scotland but I was pleasantly surprised that it wasn't too hard at all. (: The smoothie was my favourite since I love them! Hopefully the next time I visit I won't be leaving!

Aw welcome! The recipe for the snack bar is in the description. For the tofu, I do 3 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp balsamic, 1/2 tsp thyme, 1/2 tsp oregano, 1 tsp garlic granules and 2 tsp nutritional yeast :)
Lovely video as usual! I'm not vegan but everything you ate looks delicious and I would totally try all :) I grow mint on my balcony, I love to make my own minty green ta and I add it to all sort of foods. Mint on grilled aubergines is so yummy for example :)

Am an unapologetic lover of oats; probably my favourite meal of the day... 😂 Except I make mine on the stove; first I add an apple (sliced) and let the water come to a light boil; then I add/eyeball amount of oats and some oatbran; followed by date sugar and cinnamon. I let it lightly boil for a minute or two; remove, place in bowl, and at the end add some chia seeds, a bit of flax and maybe some other type of fruit; walnuts, etc.. 😋 It makes me sad to know that it's warm in Scotland... all my favourite places on earth are warming, and what I loved about them: the coolness, the ecosystems... changing, and not for the better. Let's hope humanity wakes-up and goes vegan, before it's too late. We could rewild an area the size of the continent of Africa on a plant-based/vegan humanity. One of the best books I've read on the subject of our species, is Sapiens, by Yuval Harari. What humans are not understanding is that it's not the cars, etc. that are causing the warming, it's the fact that we've destroyed nearly all ecosystems on earth; we began this 70k years ago. More than 87% of the climate crisis is due to animal ag, and we are down to less than 4% of mammalian wildlife biomass left on earth... 💔

Hot lemon water (btw hot water kills vitamin C) and the meal you‘re prepping looks like food for colder weather to me 😂 What do you consider „heat“ in Scotland? I read about a 21 C „heatwave“ and was chuckeling .. that’s room temperature 😂😂😊
