  • Another great battle! This one is quite sensational. We were wowed by the results.
    This episode of whetstone war took a while to make. We had already shot this video. The knives had been used too many times. We had to go back and thin them. That was an earlier episode. Now they are great performers and we are excited to do this episode again. Sharpening these knives was so much joy on these two wet stones. You will be impressed.       @@nadm Very surprising. I thought the morihei would end up having a slight edge overall. Quite surprising to me that it lost both in performance, and got obliterated in price. I have the Morihei 4000, and I am absolutely in love with that stone. I really thought the morihei would come out the winner. I have been eyeing off these 2 1000 grit stones for some time and it looks like I definitely know which one to choose if I make the plunge and buy one.

    I'm using the Cerax 3030 giant brick as my 1k. I use the Arisayma 6000 later on

    Nice review really helpful! Do you have nanohone stone 1k to compare with imanishi 1k? I think it will be comparable which makes me fun. Thanks

    Would you say the Imanishi 1000 is your favorite 800-1000 stone?

      It's suddenly became one. It really shocked me and they performs outstanding. It's hard to be there.

      @@nadmglad to hear - I really think you need to compare it to a Chosera 800. That’s been my favorite 800-1000 grit for over a decade. I’d be very interested to get your comparison especially as most everyone considers the chosera 800 vastly better than the chosera 1000

    Can’t go wrong with Imanishi imo. My 8k works great and Mr Imanishi is a highly respected stone merchant of both natural and man made stones. Seems to me you’d really enjoy a trip to Japan and hitting Seki City, Sanjo etc.

    What is your everyday setup stones to sharpen your personal knives? I know you have so many but when u say ok. Im going to sharpen my knife today what are your go to stones and combination plz

      I will rotate stones. But one K is as low as I need for my nose because it's already pretty sharp then I'll go to 3K and then five or 6K and then possibly an 8K depending on the use of the knife. I go higher on a slicing knife. I don't mind grabbing any of the stones by any of the manufacturers. I tend to lean towards the big ones like Suehiro or Nani why or Shpton. I fell in love with the Imanishi in that last video the one you just watched

    How do you think the Imanishi 1000 would be like compared to Suehiro Cerax 1000. Your opinion is appreciated.

      I do not have the Cerax brand by Suehiro but I love the Suehiro Company. It's going to be an interesting bottle. I do not own the Cerax version.

      The arashiyama 1000 is better. Not by much, but still the better stone. Slightly faster, more abrasive, better tactile feel and feedback, dishes slightly slower, leaves a slightly better edge, even has a really nice color.

    Thank you for the comparison!! Why didn't you text it on PT50A? And how do you think arashiyama compares to chosera 1k king 1k or shapton glass 1k? What do you think would be the results?

      First of all, I had no idea that this would be the outcome. I was completely shocked. I think it's amazing. It jumped right to the top of my list of performances. It blows away the king. I haven't done the shop in class because I don't own one. We'll get into that later. I like shouting but with the thickness being so little and the price then you would probably have to go with the Arashiyama simply because his performance is amazing and it was $39

      @@erickzhou5314 I mean, that's a great stone. You don't need another one at that grit. If you have the money then why not. It's so cheap!

      @@nadm it's cheap in US, but i will have to import haha, so I would probably pay the price of the stone + 90$ + 80% more for the shipping fees

    I forgot to add last night that I use a Nakoto Aoto Medium finisher before the 6 k Arisayma...I do have a 10 k and a 15 k for a couple of knives.

      I added another 10 K this week. That’s two I believe I have. I have a bunch of Japanese natural stones that are above that. We’re gonna be doing some comparisons soon.

    If you only had one stone, get a strop. You just managed to get a really great stone for this cheap, you will have money for a strop too. If not, figure out a way.
    To be fair I don't think I've seen anyone say 1000 is the best Morihei, in fact I don't think I've heard anyone recommend Morihei for 1000. The 4000 on the other hand or Karasu are the ones people get really excited about. And then again I've seen Imanishi Kitayama 8000 get really good recommendations as well. And I must say, going from Morihei 4000 into Kitayama 8000 is a really nice experienced.
    Interestingly enough so often the 1000 stone is something like Shapton Kuromaku. Maybe Naniwa? Seems like people have much more interest in different 400 grit stones than 1000. People often say they don't really even like the feeling or sound of Kuromaku 1000 yet they still use it.
