Ollie famously has hated oysters at every place hes tried. So its a big deal he likes this one. Also crawfish are only around 15% edible meat by weight, so 3-5 lbs is barley a snack for most people. A proper southern seafood boil is very very easy to cook at home if you can source solid seafood. Its literally just a heaping of spices in a pot of water. The most common in the US are either Zatarians or Old bay, of course you can make your own as well.

But then, a true proper boil will include sweet corn on cob, quarter red wax potatoes, and andouille sausage slices as well.

Since you're planning on going to Texas, you will be able to have Gulf shrimp. Best shrimp in the world comes from the Gulf of Mexico. The biggest mistake people make with crawfish or shrimp is in cooking. They don't know about seasoning, and they cook WAY too long so it comes of like paper mache. One way I got around issues when I had my wisdom teeth out and they said jello and liquids for a week, I said screw that. Mom grated some seared pork chop and rolled it in mashed potato. Had early peas to round out the meal, and no chewing necessary, but good protein. Thing is, the mud bugs are seasoned. Get that on your fingers, then it's in your eyes, and everything you touch. The lobster isn't seasoned. So no big deal with gloves. Lobster head isn't suckable because it isn't seasoned. One thing for sure, we will feed you in the South.

AND with the Interstates (two transverse Texas and Louisiana), it's easy to go from one to the other and get great food from each.

Sorta. We in South Central Louisiana like doing our own thing BBQ-wise. If you go to a place boasting Texas style BBQ in Louisiana, you will get Texas style BBQ. If you go to a place that serves our own BBQ, you're getting something unique. Like stuffed brisket, alligator, pork, smoked boudin and other stuff with our twist on it.
As far as Texas Cajun food goes, those respectable places are Cajuns from Louisiana 😁

I've seen a lot people or restaurants screw up with gumbo, jambalaya, and crawfish. That's even in the Louisiana. Oh I know your wisdom tooth pain. My two bottom ones also grew in sideways. I got the first one surgically removed when I was a senior in high school. I developed a dry socket with that one but when I was 21, I had the other three removed and they hooked me up to an IV drip that didn't knock me out because I heard the entire conversation and I could acknowledge when asked questions to make sure I was feeling ok and MAN that was the way to go. I seemed to heal faster after that procedure but when my dad came to pick me up, he told me I looked drunk, lol.

We do lack the lobsters out here though, I’ll admit that. Maine really is the best for those giant, delicious sea pinchers.

    • @adamr9215
      @adamr9215 9 месяцев назад

Im not from either the northeast or Louisiana, but from my prospective, the New England style is exactly that. Bland, English style cooking. But, it works with nice clean ingredients. Lobster and clams have a delicate flavor that would easily be hidden by too much seasoning. Mudbugs from the swamp are a different story. They taste like where they are from, so a strong swampy taste, even if purged for a few days. So you want strong seasonings that cover it up. The crawfish also have their own taste that is stronger than lobster, so spices tend to help accentuate it rather than cover it up.
Im not gonna lie though, when I’ve had clam chowder in New England , I dumped plenty of Louisiana hot sauce in it to give it some flavor. I am from Texas, so we have Louisiana and Mexican food influencing our tastes, so it ain’t a meal if it don’t make you sweat.

The Blue Crab State is the State of Maryland; hard and softies. They don't taste as good anywhere else because our colder winters keep the crabs dormant. They are fat, heavy and sweet. We also have the absolute best crab cakes. We buy hard crabs by the bushel, softies by the dozen and just eat and drink beer all day long when we have crab feasts. Old Bay is made in Maryland and used in all states, including Louisiana. But, in the DMV, we don't boil seafood, we aren't trying to cover the taste with heat; we just steam it with beer, vinegar, bay leaves and Old Bay

You should check out snapping turtle its has 6 or 7 different meats under the shell. You have to keep them in clean water for about a week to get the mud out of them. You have to change the water every day.

From Texas, you want to Lake Charles for crawfish, down along the Gulf. I don't know when you are going, but if it is soon, crawfish aren't in season, and you'd be getting imported Chinese crawfish. Crawfish season starts in the spring.

Here in Louisiana, alot of the farmers do their crawfish on a plot of land, and then after they have fertilized that plot they will grow rice on that plot. Its a great system. Come to Louisiana when you can, we'll hook you up!

There is a lot of waste weight in shellfish. When she says people eat 5 pounds, she's referring to the weight of the entire creatures. After you're done you have pounds of husks left over that will soon become 'high smelling'

I feel ya on the tooth thing...seriously. I had all 4 removed at once, two dry sockets, chips of tooth finding their way to the surface and coming out, allergic reaction to the antibiotics that landed me in the ER. Shot of Demerol, and then I was in recovery mode feeling like crap for a week playing video games and eating ramen. Worst. Ever.

So very sorry about the dry socket, I had four at the same time. The pain lasted 8 months! Lesson learned # one: do not use a straw with a shake or ANYTHING....It's A guaranteed trip to pain town. # 2: pain pills are usually a waste of time. Ibuprofen works better with teeth. I had to go in every other day and have the sockets packed with the really good stuff for 8 months. After the packing was done, I was still in pain so I used oil of cloves and a Q-tip about every hour. Oil of cloves is amazing but it tastes horrible. It does stop the pain right away. I'm not a doctor but my surgeon told me about the cloves as a last resort. He was as out of his mind as I was, he couldn't get the pain under control. Hope you feel better. Lord, that was a horrible memory!

I feel for you, I had a tooth turn sideways and pushing on a nerve, and yes I had it pulled, and I used a salt water mixture to rinse and spit it also keeps the socket moist and clean. Look it up and try it. Oh, the best over the counter pain medication in my opinion is BC POWDER arthritis strength.

Jono, if you removed a secondary molar don't replace it. Primary molars do the grinding and contact with the other set of teeth. Secondary molars not so much, and trying to keep them clean (even if they are prosthesis) prove to be daunting. Simply pack the missing space in with bone dust, suture up the gum, and move on with life.

Now what these guys need to do is get some true good seafood from up here in the Pacific Northwest. Alaskan wild caught salmon, giant oysters that are just awesome grilled on full shell, dipped in garlic butter. Nice, delicious large leg Dungeoness crab, all sorts of delicious freshwater fish species like trout, sturgeon, all sorts. There’s not much better than pulling a nice, large rainbow trout out of a lake with your own two hands and fishing rod, prepare and flour up, fried up in a nice cast iron skillet…unless, of course, it’s a nice, dark red salmon pulled right out of the Columbia delta, seasoned up and citrus added…baked to a nice, flaky perfection.
If you fillet a salmon up, fry it up in a skillet…let me say, the nice crispy skin that results, they call it the bacon of the sea. Plus, fish like salmon, swordfish, tuna, mahi mahi, they’re all nutritious foods, good Omega 3 essential fatty acids, high protein, B vitamins, iron, and fish has some of the lowest amounts of saturated fats and triglycerides of meats.
I’ve gotten my mouth watering now…
