Canned biscuits do not come in a tin can, like canned beans. They come in a cardboard roll (like a paper towel roll) with metal lids on both ends, and you bang the cardboard against a hard object, like the edge of the countertop to "pop" the biscuits out.

A lot of southern folks refer to canned biscuits as "whomp biscuits" (because that is the noise produced when you whack the tube of biscuits against the edge of the counter}.

The flavor comes from the original chicken stock he set aside. Then, salt & pepper to your own taste. Taste first, as the chicken stock is already salty. Then add, if necessary.

May I add a secret to getting really great chicken broth for your dumplings or any soup/stew? Use skin on, bone in chicken pieces. Season the chicken with salt and pepper or your favorite seasonings. Bake the chicken in the oven till golden brown. Baking the chicken first increases the chicken flavor a hundred times. After chicken is golden brown, allow to cool so the flavor will draw back into the chicken. (I always back my chicken and freeze it so it is ready for the pot or any recipe I plan on making, whether chicken and dumplings, soup/stew, or shredding and making chicken tacos or enchiladas, or chicken and noodle casserole, saves a ton of time. I also chop and freeze celery and onions when they are on sale). I sautee a very small amount of onions & celery in butter, season it with salt, pepper, and poultry seasoning so that it enhances the chicken broth, but does not overpower it. Then I add the chicken (still with bones in & skin on), cover the chicken with water, and allow to simmer for an hour to get all that wonderful chicken broth and so the meat will fall off the bone. Then I remove the chicken, bones, and skin. For additional strong chicken flavor, I mince the chicken skin into micro tiny pieces and put back in the pot with the chicken and broth. I use a standard dumpling recipe from scratch. When cutting the dumpling open, the inside looks like you have sliced a loaf of bread. The recipe is from the 50s and uses flour (1 cup sifted all-purpose flour), baking powder (2 teaspoons), milk (1/2 cup), salt (1/2 teaspoon), and oil (2 Tablespoons). But, I always double the recipe. We love the dumplings. I mix the dry ingredients in one bowl and the liquid ingredients in a measuring cup. After mixing the dry ingredients, I make a well in the center. I pour the the wet ingredients into the well and using a fork or dough tool, fold the dry ingredients into the liquid and continue to most of the liquid is absorbed. BUT, do not mix the ingredients long, you do not want the mixture to be dry like a bread or biscuit dough. I use 2 spoons to make my drop dumplings. I use one spoon to scoop up a spoonful of dough and the second spoon to form the ball and scrape the ball out of the first spoon and into the broth. The dumplings will increase 2 or 3 times its original size so keep that in mind. Put a lid on the pot after the pot is full of dumplings, turn the heat down to simmer and allow to simmer for 8 to 10 minutes. Because my family loves them so much, I will cook and remove a batch of dumplings before adding more dumplings. Overcrowding the pot with dumplings will not allow even cooking which will result in some dumplings being bread like and flaky inside and others will be very doughy and hard. I hope this will help you. Now if only my kids could follow the recipe, then they could cook me dinner for a change! LOL!

I don't do chicken and dumplings anywhere like that. It's just the thing isn't it? Depends on where you learned to make them and the cook you get the recipe from. Some people like them rolled out, others like what he did and I make mine more like a wetter drop biscuit. I use just chicken broth, no cream and put poultry seasoning in the broth. I also add in carrots and onions to mine (just because I can). Drop the biscuit dough in and cover. It thickens on it's own. I learned from a cook in Mississippi, my grandmother. But, yes, mine is definitely seasoned with the poultry seasoning.

Recipes vary. You can go online and check the differences. The broth can be light or creamy. I prefer a light chicken broth.
I'm used to seeing this dish seasoned with parsley, pepper, salt, carrots, and celery.

There are so many wonderful ways to make this delicious stew; there is no wrong way. It is so much fun to watch people make the recipe they enjoy. Being diabetic, I had to adjust how I make the dumplings because they are carb heavy but that hasn't stopped me. I just use low carb flours. I love carrots and peas and onions and tons of seasonings as I don't like anything bland. But what matters is to make it the way you enjoy it. Awesome video.

The seasoning went in when the chicken was boiling. It's basically just salt and pepper. Now, I personally add poultry seasoning to finish, as well as adding carrots, onion, celery and garlic to the chicken to flavor the broth.

Only seasoning really needed is salt & pepper. I would strongly recommend some thinly sliced celery for a new flavor profile. These are southern style dumplings. Also in the north they make a thinner dumpling. Often called sinkers or swimmers, it is really British vs French style. Now most in Britain wouldn't know this dish at all even if they did invent it.

Everyone has their own recipe for chicken and dumplings. I like to use busquick for my dumplings. I will use a cockpit to cook my chicken (drums and thighs in water). When chicken is done take the meat off the bone and shred it. For seasonings I add garlic, salt Pepper and Worcesterhire sauce.
Add the dumplings dumplings to let it cook on high for an hour . Stirring occasionall it should thicken up as it reduces. When you are at the consistency you like , taste and adjust seasonings. My whole family loves it.

I do add small diced celery to mine. You can season it with your favorite seasoning. I use Tony Chachere's cajun seasoning, lil parsley. Extra salt and pepper if need. No dogs in the bedroom???? How odd... my cats are allowed to just do whatever they want and can go where ever they want. For the record, they aren't jumpers, so the kitchen counters are safe... but everything else? I want them on top of me 24/7. There are cats beds on my bed - there is also a very special cat scratching post that might be in the shape of stairs leading up to my bed. My bed might contain more cat real estate than human real estate. There's one in my lap now. And since they're cats, if you don't want fur on your couch or something, just lay a towel down. They think that's a special spot!

No no butter milk . Sweet milk , and I have never seen anyone put cream or milk in as a broth to cook the dumplings. It’s usually using the chicken broth which is golden from the broth which is chicken fat you must have fatty broth to get the flavor of the dumpling not saying he is not good, but I don’t know where the flavor comes from. It can’t be just from chicken breast, which has no fat in it.hum

I don't like dumplings made from biscuits. It's just not what I grew up on. My mom used to use a brand that's no longer available, and I can't remember the name of them. They were a flat dumpling, and were in the frozen foods section. They were awesome. I don't know what mom did to make hers so good, but they were the best. So chickeny tasting, so rich. I've seen some that looked like hers, but they don't taste like hers.
Yeah, after just a little bit of this video, this it nothing like the dumplings I grew up with. I've had some like this that various people have made, and I don't like em. They're too thick to me. They have a completely different texture than a flat dumpling.

I have never liked chicken and dumplings and your comment about the lack of seasoning sums it up perfectly. It is a boring dish! Don't waste your money on making something like this. The slaves and the Creole came up with all the good seasoning for southern food, so you might want to really focus on people from the Louisiana area for Creole stuff and if you're following a recipe from someone who is black and from the south, you'll probably end up with something good. Start following some of the famous southern black chefs on this platform, I'm sure there's at least 100,000 of them. Not to diss Cowboy Kent, this is a really nice man who does make some good stuff, this just isn't the best dish to try.
