    French Onion Soup
    serves 4-6
    6 cups (2 pounds) of thinly sliced onion
    1/2 teaspoon salt
    3 tablespoons of unsalted butter
    1 teaspoon olive oil (vegetable oil is fine too)
    1 tablespoon flour
    4 cups (1 quart) beef broth
    2 cups chicken broth
    1/4 cup cognac
    1 teaspoon thyme
    salt and pepper to taste
    1 ½ cups freshly grated Gruyère cheese
    Crusty country bread, or baguettes, stale
    In a large saucepan over medium heat, melt butter then add oil to prevent burning the butter. Add onions and salt and begin stirring to begin wilting the onions. After a few minutes, place a lid on the pan and stir occasionally for about 20 minutes. The onions should begin to brown and taste sweet but still have texture. Scrape the bottom of the pan as needed and sprinkle the flour evenly over the onions. Mix together; the onions will absorb the flour. Slowly add the beef and chicken broth. Taste for seasoning. Add the thyme. Bring the soup up to a boil and add 2 tablespoons of cognac. Reduce to a low simmer and let the soup "cure" with the lid off for about 15 minutes. You are ready to hold this soup base for a few days, or assemble immediately.
    TO ASSEMBLE:
    Choose a small ramekin or other heat-proof crock. Place a piece of bread in the bottom, pour the soup mix with onions over the bread, top with cheese. Place under the broiler until the cheese is bubbling, melted and golden brown, about 5 to 7 minutes. Enjoy!
