Diabetes-Friendly Carrot (and Beetroot) Halwa Perfect for Occasions

  • When desserts can be so healthy, why should we hold back? Try this delicious Carrot-Beetroot Halwa at home and see your family's reaction when you tell them it's sugar free!
    Ingredients:
    1 cup grated carrot
    1/2 cup grated beetroot - Because we don’t get red carrots all year, beetroot is a great hack to get a beautiful colour.
    3/4 cup date paste
    1 cup plant-based milk
    1 tsp cardamom powder
    1/4 cup soaked raisins
    1 tbsp slivered pistachios and almonds for garnish
    Instructions:
    Step 1. Grate the carrot and beetroot.
    Step 2. Heat a pan on medium heat and add the grated carrot and beetroot. Stir for a few minutes until they are slightly cooked.
    Step 3. Add the plant-based milk and cook for a few more minutes.
    Step 4. Add the date paste and cardamom powder and mix well. Cook on low heat for 5-8 minutes or until the excess moisture is absorbed.
    Step 5. Add the soaked raisins and mix well.
    Step 6. Remove from heat and let it cool.
    Step 7. Garnish with slivered pistachios and almonds.
    Step 8. Serve warm or chilled.
    Pro tip - For some extra richness, add 2 tsp almond butter to the mixture while cooking.
