    We use it on everything. It's healthier than butter, and has a nice fresh taste. You can even eat it simply with bread

    Watching the olive harvest in the fields and the production of oil in the mill is one of the most beautiful experiences I have made my clients live in Italy. Especially if it ends with a tasting 😊

      Find the 4 hour documentary that is split in four parts about the Byzantine era. First episode shows how they made olive oil with s stone carved factory. Should be easy to locate.

      This is the traditional making. Nowadays it is done by modern machines. Instead of pressing there is centrifuge etc.

    Does this make anyone else almost want to cry, with how beautiful and pure this absolute cornerstone food product is? It's 10,000+ years old, it's used throughout the entire world as the basis for so many foods, it's recorded to have been used in religious ceremonies, I mean this stuff has such a deep connection to human life it's just amazing. And to see this awesome video showing a high quality production of this sacred thing, it just moves me deeply. Seeing videos about high quality bread makes me feel the same way.

      There are many different types of olives, some of which are briney (like the green olives used in Martini) or bitter with a slight sweetness :)

    With my all due respect to Italians, this method is by no means exclusive to them. As someone from the Mediterranean, i do believe that most - if not all - Mediterranean countries have had this method since ages.

    I asked my mother if she’d used her olive oil I’d gotten her for Christmas…..she said “no I haven’t cooked with it or needed it.” I said “I don’t understand. I’d like it back then.” No I’m not a Cruel person but I sincerely don’t understand how one cooks without olive oil or goes a day without it!!! No point in keeping good fresh oil sitting on the shelf. Olive Oil is Incredible!!! This was a great video!

    A good sourdough bread, a good tomato spread over, a good first cold press olive oil and a peace of iberico ham. There's nothing better you can eat, all the basics from the fields to the mouth. No complex sterification and emulsions, reductions...would ever match the simplicity of time working for good products

The problema si that the market os full of copies and pigs eating only a portion of acornes. A good ham para negra I don't think neither you ir me hace ever tasted It.       Search brands with "dop" and "igp" simbol on it, and you will be golded.
      And only take "extravergine" oil that means its cold pressed and good

      Not true, extra virgin doesn’t really mean anything! Italy can’t possible produce all the olive oil they supposedly do! They get Olives from all over the Mediterranean (Greece and n. Africa especially) they’ve been caught mixing other oils in their olive oil in the past! U can find some real olive oil in the states!

      @@K3nn9n i suggest you to study a little bit more , if an extravirgin oil get's an D.O.P or I.G.P certification, there is no way for the company to mix the oil cause there are several quality control managed by inspector of quality, otherwhise those brands would not be able to get the certification!
      Before to buy your Extravirgin Olive oil check the label!
      P.S there are mixed oil , but the company is obligated to write down when the oil is mix so you will find ( oil from the european union or italian olive oil, ecc)

    I lived on a olive farm when I was 18 for 2 years, nothing will ever beat the taste of fresh bread, salt, fresh press oil and an Italian beer after a long day of work on the farm. Millenials need to work for their supper.

    As an Spaniard, I have to defend our olive oil culture. Spain (and mostly the region of Andalucía), is the biggest exporter of olive oil BY FAR. In fact, the province of Jaen (with around 110.000 people), produces many times the amount of olive oil than the entire country of Italy.
    I don’t intend to disrespect italian’s olive oil but I would like to consider and recognize the magnificient of Spanish’s olive oil (probably the oil that you buy in your countries) or at least, the olives from which the oil is made come from Spain.
    Yes Italy has an amazing marketing of its culture and products, but here, the undisputedly king of olive oil is Spain.

      @@Dinamicoplus I’m actually studying in Italy and I have a bottle of olive oil that says the oil is a mixture of “European Union” olives, so as to not say that are from Jaén (that are from there for sure because I recognize the smell and taste of the oil).

    For your info: most of "italian" olive oil is just spanish imported oil, only in high end expensive bottles you can find true italian olive oil. Standard supermarket ones are mixed 20%italian 80%spanish, this is done because named "italian" has more marketing value :)

      @@emprahsfinest7092 most of the time just stronger tasting. Even italian oil is extremely different from north to south. Oils from Liguria and, to some extent, Toscana are very delicate and light. Oil from Sardegna or in general southern italy is generally much stronger tasting and acidic. Both good but def suited to different dishes. Northern oil is generally regarded as higher quality and more expensive.

      Modernizing the system doesn't mean that the procedure is not ancient. We Italians produced olive oil for centuries, the fact that we have some modern help doesn't erase that.

      Do not be certain it will smell fantastic... the smell of the (organic) waste tends to prevail and to me is not really nice.

    Thx for the content, but I really miss personal stories. I want to see a happy face of the farmer or farm owner, who tells me "it ain't much, but it's honest work". I mean, most of your heroes obviously like their work, and it's a joy to watch.

    Olive oil is the best fat in every single way. It's healthy, it adds another dimension to a dish, it can be added to bolognese sauce or to cold salads, it has a distinct flavour, there's so many flavours ranging from cheap to expensive and it never smokes or burns unlike almost all other fats. It's truly an "ingredient" and not just something to make stuff fry.

    Olive oil is graded on its organoleptics. Acidity is simply a chemical standard. Low quality olive oil witch is refined ( acidity is chemically reduced using an alkaline solution) may have an acidity as low a 0.1. Never choose an olive oil by the acidity. It means very little. Especially without all the other chemical parameters.And never buy any other then extra virgin olive oil

    This is so wonderful! I never knew the process of how to make Olive Oil. All I knew is that I'll pour it from a bottle or from big containers. I have seen a lot of Olive Trees in Israel, but I never knew how the oil is made. And I've been so used to it called in Hebrew as SHEMEN ZAYIT (shemen - oil / shuman - fat and zayit, singular form, zayitim, pluran form of Olive). I'm so happy to learn something new today.     majority of italian oil is bought from Southern Greece, imported in bulk to Italy then bottled, branded and sold as Italian ultra virgin olive oil. There is an uncharted lobby as well! Some producers are obliged to sell to Italy!

      Same with some Portuguese olive oil producers, they are sold as Spanish.. this is fact. Happens with other products from other industries all over the world..nothing new

      Not necessarily of course, most decent Italian olive oil is made and grown in Italy. However it is a ridiculous law that if it is bottled in Italy it can be called Italian. Always check the label carefully.
