Cold Noodles with peanut sauce is a great side dish or lunch. Thin pasta is actually one of the good choices of noodles for this recipe. Please make sure you cook your noodles al dente and shock in ice water or rinse with cold water. Enjoy!
Ingredients:
cold cooked noodles (fresh, dry or thin pasta), 5 oz
2 tbsp roasted peanuts
1 tbsp roasted sesame seeds
2 tbsp ground chili pepper or chili flakes
2 green onion, finely chopped
4 garlic cloves, minced
1/2 cucumber, cut into slivers (or bean sprouts)
sugar
ground Sichuan peppercorns
light soy sauce
black or rice vinegar
sesame oil
vegetable oil

I have never acquired a taste for cold noodle dishes but that does look tasty. Are the noodles cold or room temperature?
They are cold like salad but you may serve it warm 😄

I love dan dan noodles and have my own way of making them. It is such a satisfying snack. Just out of curiosity have you made suan la chow sho? As for the noodles I get fresh noodles from my Asian grocer and it only takes 2 minutes to cook them. Btw, I made veggies with your garlic sauce and it was most excellent!
Here’s my wontons in chili oil. If you add vinegar, it will be hot and and sour 😋

@@ChineseHealthyCook I make my own chilli oil using Thai chillis, scorpion peppers, and reapers. Of course I also use Szechuan peppercorns for the astringency. When I make dumplings I use my hot oil, light soy and black vinegar as a garnish. Sometimes I'll add fresh cilantro if I have it. I've made wontons myself but our local market has a great variety of frozen wontons so I buy theirs. If you haven't guessed, I really like Asian cooking and so does my spouse. Sadly she can't handle the really spicy dishes so I hold back on the heat and just add it to my dish. Or I just make two separate dishes. There's a dish we both like called ants creeping on trees. It's just ground meat in sauce served over mung bean noodle. Mine has chilli paste with garlic; hers just has black soy and garlic.
