I'm on a State Pension at the age of 67 and am blessed to receive it on a monthly basis after finishing work at the age of 64 having breast cancer, also a single mastectomy, chemo therapy and radio therapy leaving me with Osteoarthritis but am also blessed to still be able to get about and feeling well. My husband was made redundant last July at the age of 65 and is not 66 until this July. He found another job in the trade he was in working 3 days a week for a different Company. We also moved into a 2 bed bungalow 3 years ago. We absolutely love it and it has been renovated to out own needs. When I worked my Mom would give me a call and knew I was having a stressful day. When we ended the call she would get a tin of corned beef out of her store cupboards and always had plenty potatoes, onions and cheese. The next call I would have later she phoned to say she gad made us a corned beef, cheese and potatoe pie. It was delicious and to think I had only got to warm it up for three of us as our Son still lived at home. For some reason she could alway cook us a meal or call to say I have done you a nice salad in the summer months. Mom passed away at the age of 90 last May and we miss her dearly 😢. My 26 year old son is a head pastry chef in an hôtel in Canada, from his first post until he went to Canada 2 years ago he’d always worked in Michelin * restaurants - whenever he comes home the first meal he requests is my corned beef pie 🤣

Growing up in Brum, as a nuclear family.. Gran, Grandad, mom and auntie all who were hard working people. our meals were economical and delicious consisting of meat, potatoes and veg every day. Portions were 'normal' size and we always had enough. Thank you for doing this.
I overheard a conversation discussing some litter on the floor. It's was the remnants of a McDonalds meal. One said to other, 'I feel for the youngsters these days, having to eat this cheap food!' I was gobsmacked. A McDonalds meal(drink, fries burger) is about £5.99. In my opinion, that would feed a family of 4 well. As you say meat, potatoes and veg. You mention Nuclear family did you study sociology? I did sociology and psychology, loved it. Thank yiu for your comment.X

SO I ask the butcher to get me some from the back freezer. I have some in the crockpot at the minute with carrots and onions slow cooking all day. I average 8oz meat off them, sometimes more. Once off the bone I can make soup, using the stock, or freeze the stock and use the meat in a chicken pie, curry or sandwiches. COST? about $1 dollar. often less. No, I didn't actually take the course but have done a lot of studying. I worked in Maternity, labour and delivery. But not as a midwife...Drs do the deliveries here, at least in hospital which is where I worked..However, there has been a growing number of home births with midwives in the last 20 years or so.

I always batch cook.potaoes and freeze using an ice cream scoop for portions. 2 or 3 scoops. The secrete is the type of potatoe used. White potatoes do not freeze well and when thawed are very watery.
After a lot of trial and effort, I’ve worked out the best way to reheat defrosted mashed potatoes is on the stove top in a saucepan! Just keep stirring over the heat and all the wateriness (is that a word!) will evaporate and they are as good as freshly made. Doesn’t take long and once the water is gone, you can reheat later in the microwave if necessary. For shepherds pie etc, I freeze the meat and mash separately. Try it 😊

Thank you. My mother wouldn't use sweet potato just ordinary potatoes. She would add whisked eggs on top so that they baked . Yummy with brown sauce . My siblings and I (4 of us ) would clear the plates on hash night . Memories.
I’m so glad I found your channel Tanya. I’ve had a metal insert slow cooker for years and not once did I consider putting it on the hob to start the cooking process before starting the actual slow cooking. Saving time and money. My aim in life. I actually bought a ceramic insert slow cooker a year ago and compared to my metal one it did not work well for me. It’s now in a glory box for when my grandson sets up home independently. I haven’t made corn beef hash for ages so guess what is on my shopping list this morning - yes, a tin of corned beef. It’s very nutritious and a cheap protein, tasty too. I love your channel, you chat to us like an old friend. You look like me when I cook, things everywhere but a good end result. I'm cooking for one. Sometimes I freeze 2 portions together because I don't mind having the meal twice. Batch cooking becomes second nature after a while and filling recipes with nutritious fibre filled veg is great. I've still got Christmas 8p veg in the freezer that was prepped and frozen. That will be used up over the next month or so. Your retirement will be here before you know it. Thanks for commenting. X

I went to buy a tin the other day, they now want $4 a can....it used to be a cheap alternative with spam. I'm the only one who likes it in our house, I think it's nostalgia more than taste. Loving your videos, as a Yorkshire lass I know a bit about saving money haha

Great tip chucking potato’s to bake whilst you are using the oven for other things. I make my corned beef hash by cubing the corned beef, cubing potatoes, peppers, onion , tinned tomato’s, tin of baked beans garlic and 2tbsp brown sauce (if you cube the potato’s very small they cook in no time with the onion and pepper saving on pans to wash up and energy to cook the mash). I swear by an old fashioned steamer basket to cook stuff over boiling potato’s as well …it’s like free steam energy lol. You may like dragon pie: brown 500g mince beef diced onion add to casserole dish with tin of beans, tin of plum tomatoes, tin of kidney beans, frozen mixed veg of choice, garlic powder, chilli powder (1 tsp makes it quite mild but you can ramp it up with more) salt and pepper I also add frozen green beans and pop in oven for 30 mins this makes a lot which I use to stuff peppers, have with rice or mash even use for tacos and burritos ( I have no idea why it’s called dragon pie though 😂)
I've seen corned beef hash done that way too. Its such a yummy meal. Dragon Pie sounds good too and it has all the ingredients I have in my store cupboard and freezer. Lovely. Thank you for commenting. x
I love the. idea of incorporating carrot and other root vegetables into your mashed potatoes. I've done cauliflower and not one person knew the differences at Thanksgiving. I'm going to try the corned beef hash. It looks really good. Thank you. Have a great weekend.
The swede in particular adds a lovely flavour to the mash. I've hidden so many vegetables in recipes when the children were small, no one ever detected it. Have a lovely weekend too. x
@ I think swede is the same as rutabaga here in our stores. It's large round, coated in wax film? Creamy white color with hints of pinkish/red.. it's not a popular vegetable and usually expensive.
@LivingonaUKStatePension They have recently launched Tikka Curry beans, they are really nice and miles away from basic baked beans. They still make the classic curried beans too.
One of my favorite things to do with a can of corned beef is to save my leftovers other words first make the hash. Then I put the leftovers in the refrigerator and a few days later I mix the corn beef with mashed potato, onion, other seasonings I’m in the mood for, and maybe a little bit of sweet bell pepper. It just depends on what I have in my refrigerator. And I blend this up in my little mini food processor, then Pat into Patty‘s and grill them lightly and just serve with some other vegetables however, here in the United States canned corn beef is very expensive now I keep a few cans of it in my pantry in case we have a power outage or something and cannot cook, but otherwise I don’t buy it because of the price, but I do like it.
Sorry, just adding to my previous comment, I too have trouble with frozen mashed potatoes. I drain carefully, mash with a little butter but when I defrost it is watery. I wonder if any of your viewers have any hints or tips on how to make successful frozen mashed potatoes. I’m sure there must be a way. Thanks.

Mine is a very old Russell Hobbs one , specially for out buildings. Its been moved 3 times and survived ....thank goodness. I hate saying it but so many appliances these days don't seem to last anymore. x

I take my portion out, then after cooling it goes in the fridge. The last portion gets heated for my next meal. I've been doing thus for 40 + years and not had any problems. Thats why also freeze some mixture straight off. Thanks for your comment. X
If you ever get stuck for ideas on how to stretch meat and food in general further you might want to look through the videos from Atomic Shrimp. He does really interesting food budget challenges and today he made 500g of mince into 19 dinner portions in a 2 hour batch cook
I do have butter, and my last shop included Fage coconut yoghurt which is higher in fat and delicious. I also take a one multivitamin tablet that contains iron because I have fluctuating iron levels. When I have a follow up test, everything is fine. Thank you for your comment. Appreciated. X

How many times are you going to reheat the corned beef? You'd be better off freezing in single portions so you don't risk getting sick. 😊

You also miss out on eating fat soluble vitamins (A, D, E & K) if you reduce fat too much
