- In late 2014, a French blogger named Joël Roessel experimented with liquid from chickpeas and palm hearts to substitute eggs in meringue cookies. And after further experimentation, Wohlt, a vegan baker, discovered that chickpea liquid alone can be used as an egg substitute to make vegan meringues that are identical in taste and texture to traditional egg-white meringues.

I did not get it why did u have to cool the strained liquid first and then heat it again to reduce.. why don't we directly strain the liquid and heat it to evaporate some liquid??

No, the output doesn't smell like chickpeas. It didn't work for me when I had tried doing it with the initial hot water but it happened this way. The shelf life of Aquafaba is not known but it has been a week since I made it and it still seems just fine. However, be sure to keep it refrigerated. The shelf life of the other recipes you make out of aquafaba will vary depending on what you add into it to get your output :)

Just a question...if I blend the aquafaba in a blender would it have the same result as mixing with an electric mixer.
I haven't tried blender for this specifically.. but I have with store bought Whipping cream and it doesn't work well. So I'm assuming blender won't be suitable for this either :(

Still, how many ml water in a glass of water??? Quantities are crucial to succeed... How much liquid was obtained after the chickpeas have been boiled in the pressure cooker? It is important to know when reducing it to "a third"...

Can you make it without electric beater
I'm not aware of any DIY methods as an alternative.. so I believe, Electric beater is essential for this one. Regular hand beater would take a lot of effort and still won't get it to a consistency as an electric beater would.
YOU didn't get it to the proper consistency WITH an electric beater . Use a mixer or Kitchen Aid stand mixer for sure !

Mixer me nahi kar sakte yeh. Aapko blender hi lagega.. Aur aap quantity change zaroor kar sakte ho :)

It made about 2 full glasses of aquafaba. So that'll yield just about the same quantity of Whipped cream :)

Yes you can :) It doesn't last for more than a week though I've read. I haven't got a chance to store it for more than 2 days though..

Unfortunately, no :( It'll freeze up and become rather icy and not creamy :( But it should kinda melt in your mouth after freezing.. if you like the feel of that.. :D

To make it more viscous. I have followed a readily available recipe for Aquafaba to try it and since it was good, didn't quite experiment or learn the science behind it, but just made a video out of it lol

Haa rakh toh sakte hai. Agar sugar daalke rakha toh sweet foamy banega jo khaate hi mu me melt hoga :) Kisi kis ko waise pasand aata hai kisi kisi ko nahi. Aap zaroor try karke dekhiye :)

This one is more Foamy and melts in mouth.. So a little different that Whipped cream. But that is the quality I loved the most as it gives a really good mouth feel and aftertaste :) Yes, I read it too that it can be sued as a substitute for eggs. I haven't tried any recipe myself though :(

After colling them can i use them in ice cream instant of whipping cream........
I tried freezing it but it became snowy and started melting in mouth just as I took a bite. Some may like it and some may not. But that's not really like an Ice cream though..

Just beat the Chickpea Water :) You can soon add sugar to sweeten it for making sweet whipped cream :)

Yes I had used it as a frosting for cupcakes my sister had made. Turned out a little different in consistency but worked just fine :)

You can vary it according to your taste. I had taken about one glass of aquafaba and 4 Tbsp of powdered Sugar :)
U add sugar at end we can't add in beginning before whipping
It gives you an an exact idea of how much sugar you need to achieve the desired sweetness when you add it in the end :)

You can. I had just tried it in the mixer and it worked. Although you won't achieve extreme firmness if you like it that way. But it gets decently firm using mixer :)

Yeah, thats not whipped cream, that like Creme Fraishe at best. If you watch the other videos available they tell you you need to add a binder like Cream or Tartar, Guar Gum, or Xanthan Gum. Good luck with your aquafaba!

Pressure cooker just makes it faster.. you can use any vessel, add some more water and keep if for 30 mins (or until the chickpeas become soft. It'll give you exact same effect :)
