Ingredients:
1 Cup Granulated Sugar
1 Cup Packed Light Brown Sugar
4 Large Eggs
1/2 Cup Canola Oil or Vegetable Oil
1 Stick Unsalted Butter, melted
1 cup Sweet Potato Puree (1 Cooked Sweet Potato, mashed)
3 Cups All-Purpose Flour, sifted
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
2 1/2 tsp Cinnamon
1/2 tsp Nutmeg
3/4 Cup Milk
1 Tbsp Vanilla Extract
Caramel Icing:
1/2 stick Unsalted Butter
1/2 Cup Packed Light Brown Sugar
1/4 Cup + 1 Tbsp Milk
1 Cup Powdered Sugar, sifted
1/2 tsp Salt
1 Tbsp Light Corn Syrup
*Bake at 350 Degrees Fahrenheit for 45-50 minutes*
