Cheers my friend 🍻 hope to see more vids! I make a lot of apple cider cuz i got trees and add dextrose but I add yeast nutrient to prevent all the b.s. and off flavors. Hope it helps, cheers

If you're going to make Seltzer you have the right yeast, you need to use a Seltzer yeast nutrient. I do it commercially. Brew it with an unfermentable sugar and all will ferment out except the sugar you used to get a consistent abv. Omega makes the yeast nutrient and I use it commercially and at home to make sour Seltzer stuff too. Oxygen helps a lot as well but it can make you finish a Seltzer in a week no stuck fermenting but it'll always be bone dry unless you backsweeten or use unfermentables(monkfruit, Stevia ect.)

I like using Voss Kveik when I make my wifes seltzers. That Orange flavor it gives off melds well with well with all fruits. Also I have found using a stainless steel fermenter with seltzers is the way to go. Light can hold up fermentation. When I started doing mine in a old 7 gallon keg I was able to stop messing with it during fermentation.

I've binged the last 5ish years of videos over the last few days (now about to tackle some Hoppy Hour). I have a few buddies who own breweries, but I think its time I try my hand at some garage beers! I'm definitely leaning BIAB on an electric system since I'm in Canada and we have 8 month winters.
I hope I didn't get to the party too late and this was the end, but either way thank for all of the hours of entertainment and laughs!

The frustration is real braj. Don’t let it get you down. Take a step back and clear your head. You are entertaining and fun to watch, not to mention I’ve learned a few things from you on the way. For your stuck fermentation, I know what has worked for me in the past is amylase enzyme, but I’ve only used it with beer. Not sure if it would have much effect on dextrose but something to think about. Also would be curious to see aeration with oxygen at the start with a big starter.

What you basically made here is a sugar wash. Home distillers make sugar washes all the time to make cheap vodka. A problem they run into and likely what happened to you was the PH crashes and the yeast stop working thus the stuck fermentation. You have to add something to your fermentation to keep the PH high enough for the yeast to finish out. An old distillers trick is to add oyster shells to the fermenter to buffer the PH. I would just monitor the PH and adjust as needed. PS, Don't quit :)

287 of the best brewing video's I've ever seen. All of it has been very entertaining. It prompted me to experiment more and to steer away from pre-packaged kits. I am also able to brew without spending a fortune on equipment, thnx to the advice in your video's. Whenever one of my beers is failing... whether it's stalled (or no) fermentation, ABV not where expected, flavor profile wrong.. any number of things. Before I stew in my anger, I watch a few of your videos and I feel much better about the journey. If this is truly the end, I thank you for all the content.

I hope I will see you soon having fun brewing and creating videos. I just discovered H4L two years ago when I started asking myself how to make a smoked sour beer (months before I tried to brew my first beer ever). It is by far my favourite beer channel, because it is not about beer, but about how good life can be with good friends, good booze, good 8-bit videogames. I had a ton of fun watching your videos (even the ones about food were ok-ish...), but I can understand that life changes and you come to a point where all the components that made something the most beautiful thing in life, they are just not there anymore and you have to choose to be stuck in a memory or to move on... I had a metalband with my best friends 20 years ago, iit was the most important thing in my life... now we all live far and some of the friends don't even talk to eachother anymore, families would make it impossible to reharse and tour, even the scene is not what it used to be. Time passes and I can't blame you for retiring from the beer thing... I will just miss you a lot, CJ! and I hope you will post some updates from time to time, about your life, the stray cats, the occasional batch of whatever crazy brew you will be attempting.

It didn’t look like a stuck fermentation, but way too much head space in the fermenter. That said, it may not have been enough simple sugars to be processed by the yeast.
Also, could add yeast nutrient every couple days to keep the yeast going that way as well.🤷‍♂️
What if you combine the water, pb2, and the grape liquid, then recirc like a mash for 60 mins at 150/160? it could combine and break it down a bit more than just stirring?

I did this thing where I mixed 13 lbs. of dextrose with 4 gallons of hot water. I let it cool down to room temperature(70* or so) stirred in a tablespoon of lemon juice, some yeast nutrient, and some distillers active dry yeast. Let it sit for a week and nothing happened. It was still at the sg. of 1.130. I stirred in a pack of TurboYeast and it took off like a rocket! Finished off in 5 days at a fg. of 0.990!

I brew using dextrose (as I have a heart condition & using grain wipes me out for 2 days afterwards)
first brew got stuck.....so I added more nutrient & it kicked off again
so now I use 6 heaped tablespoons of nutrient for a 10 gallon batch & it's finished in a day (kveik lutra)
but don't use a brew system, I heat half of the water on the stove (it ends up some where between 86-100 degrees) & then wrap the fermenter with 2 towels so the heat dissipates slower - unwrap it after 24hrs (I use a RAPT pill to track the gravity) & let it cool down & clear
then add fruit juice, through a sanitised strainer to ensure no pulp, to it as I keg

Sorry I missed you at XUL when I made that brewery crawl in Knoxville last week. I did try that PB&J Mixtape, and I was a bit blown away by the flavor. Yes this kind of stuff tastes good. But, I’m one of those traditional brewers who think it’s a disservice to those who strive to brew good beer. It astounds my why people waste so much time and money producing these products as you experienced. Hint: take a few jars of Smucker’s Goober, add water to taste and strength, heat to kill bugs, cool, add vodka to taste, keg, carbonate, shake periodically and serve. Same goes for the fruity sours. Just make a beer cocktail…, a spoon or two of fruit purée, a few drops of lactic acid and fill with a highly carbonated mediocre pale ale through a nitro faucet. I’ve done this several times and people really like it!
