Microfiber, as the name implies, is a fiber, not a fabric. More on the differences here mellysews.com/fabric-substitutions-can-sew-pattern-knit-woven-fabric/ So you should probably add the fabric construction type to your search for better results. Ex: Searching microfiber suede would lead you to the places you can buy upholstery type microfiber fabric.

Woven quilting cotton is often the easiest fabric for beginners as it's stable, not too thick or too thin, and easily found.

When they add spandex they generally add "stretch" to the fabric name. So stretch twill, for example.

Generally yes, though it's important to prewash before cutting and sewing to minimize shrinkage of the finished piece.

Denim and duck canvas both come in many weights. Your best bet is to get samples of the fabric to feel before deciding what you'd like to use.

If by dungarees you mean trousers, neither fabric would be heavy enough for that use. You need twill or denim.

Jersey is the fabric equivalent of what knitters call a stockinette stitch.

It depends on what the final garment will be made of, but generally cotton muslin is used.

Is chiffon most breathable fabric??
Not necessarily. It depends on the fiber it's made from. Polyester chiffon can still feel hot.
