- This video features the steps to make Persian Shirazi Salad. This is a refreshing salad made of finely chopped Persian (AKA mini) cucumber, tomato and purple (red) onion.
A simple dressing of fresh squeezed lime juice, salt, pepper and olive oil lends this salad its refreshing and tangy kick! Aromatic herbs such as mint,, cilantro or parsley can be added as an optional touch!
An optional pinch of garlic powder kicks up the umami flavor a notch.
This dish makes a great salad, side dish or starter with Persian kabobs or any grilled/barbequed meat.

Persian Shirazi Salad
Iran’s answer to Greek salad
Serves: 6 (1/2-cup servings)
Ingredients:
5 Crunchy Persian cucumbers (AKA Mini Cucumbers)
1 cup chopped cherry or roma tomatoes; seeds and center membrane removed (about 8 ounces)
1 Small red onion (about 4 ounces or 1/2 cup chopped)
1/4 cup Fresh-squeezed lime juice
1/4 tsp. Salt
1/4 tsp. Fresh ground black pepper
2 pinches of garlic powder (Optional)
1 Tbsp, finely chopped Mint/cilantro or other aromatic herbs (Optional)
3 Tbsp. Olive oil (for serving)
Directions:
Wash and dry Persian cucumbers thoroughly because the cucumbers will not be peeled. If using other (larger) cucumbers, wash, peel and remove center seeds and membranes. Cut ends of cucumbers.
Cut each cucumber in half (lengthwise), then cut each half 2 more times (ending up with 8 cucumber spears per cucumber). With larger cucumbers, you will cut them into more spears.
Cut the cucumber spears into 1/4-inch pieces. The goal is to end up with pea-sized pieces of cucumber.
Cut each cherry tomato into eight 1/4-inch sized pieces (halved, then each half quartered). If using larger tomatoes, remove seeds and membrane from the center. This ensures your salad will not be soggy and too watery.
Skin the red onion and chop into 1/4-inch size bits.
Chop your fresh aromatic herb(s) very fine, if using.
Mix all chopped veggies and herbs in a medium sized bowl.
In a separate small bowl, mix fresh 1/4 cup lime juice, 1/4 tsp. table salt, 1/4 tsp. fresh ground black pepper, and garlic powder, if using. Garlic powder adds an additional umami kick.
Pour the lime juice dressing over the salad mix and stir well using a spoon.
Transfer the dressed salad to a container with a lid that seals and store in the fridge until you're ready to serve (keeps for up to 2 days).
Before serving:
Remove salad from the refrigerator and transfer to your serving dish/bowl.
Pour 3 tablespoons of olive oil over the salad and stir until thoroughly mixed.
Variations:
Fresh minced garlic can be added instead of garlic powder.

Amoo Bagheri, there is no olive oil in Shirazi salad. At least, this is how it's served in Shiraz.😊
@@To-ranj Sorry, they gave you wrong information. There are people who do not use olive oil and put vegetable oil and they may be in Shiraz! 😁 But 90% percent of recipes on the web, on RUclips and in old Iranian cookbooks have olive oil! But if you like yours with no olive oil, more power to you! Enjoy!
@@CafeBagheri btw I'm from Shiraz. There is any oil (olive or other vegetable oil) in it. Please ask couple of Shirazi's (living inside the country) before referring to cookbooks or RUclips, this is the traditional way but they changed it a bit in other cities which is not a bad thing. I'm just saying this is not exactly how it's prepared traditionally. I pointed out because olive oil can have a dominant taste. If not yet convinced, you're always welcome to try it in Shiraz. ;)

The soggy tomato problem, is easily avoidable, without taking out the gelatinous centre. That's the most flavorful part of the tomato. Just add the salt to the individual servings or before serving to taste.
This is similar to Mexican Xnipec , which is made with tomato, onion, cilantro, radish, habanero and Mexican oregano. Instead of lime, sour orange juice is utilized.

Honestly who gave you this wrong recipe????? We would never ever use Lime or lemon juice in Salad Shirazi... you must prepare some Sour grape juice!!
(1) Honestly, I use sour grape juice myself as well (also sold as Verjuice; persians call it Aub Ghooreh). But sour grape juice is hard to find in regular grocery stores. For example, not all Iranian food stores in US have it! So, I listed what can easily be found.
(2) Lime juice vs. Sour grape juice is really a matter of personal preference! Not everybody in Iran uses Aub Ghooreh. A lot of people use lime juice.
If you like it with Aub Ghooreh… good for you! Enjoy!

So i guess as some of us in Iran, you can plant some Grape seeds in your back yard and enjoy its product😅,
