2 can corn drained
1 cup mayo
2 cups shredded cheese
1 small red onion chopped
1 green or red bell pepper chopped
1 bag of Chilli Cheese Fritos corn chips (slightly broken)
mix, serve and enjoy

I have been the lady on the ground. I thank God for the people like you who says to themselves this just isn't right. I am glad you were a nurse and could assess her. I was just as lucky. The man that helped me up I made it back to my home i don't know how because i had hit my head hard. at least you and my guardian angel were there. All of us need to count our blessing. Daily!

Hi Leslie, thank you for sharing your corn salad. We will have to give it a go this Sunday for my hubby's 60th birthday celebration with our kiddos. I think I will add some bacon bits to ours. We have now add a list of your recipes to our family favorites. Our family enjoys all the "cool whip pies". But out of the sweets hands down family and friends favorite is the Reese's cheesecake. I will have to email you a new version of the cool whip pie that I used your recipe as a base to create an entirely new concept. It turned out delicious. ;)

I make this corn salad and it is requested for me to bring it to our family get together every Christmas. I just leave the Fritos out of it and we like it as a dip with tortilla chips. God surly did answer that little lady’s prayer. How nice of you to take care of her. 😊

After mincing purple onions soak them under cold water for 7/10 minutes for so. That soak takes away any sharpness. It works with any onion.

Leslie...maybe that's why you were supposed to need gas...God knew the direction you'd go and since that lady prayed for help God answered by sending you in her direction. Hey, Leslie, I just wanted you to know that I made this corn salad for a grieving family last week. I have not heard back from them if they enjoyed it yet, but I thought it was really good. I have just prepared another today to take to anther grieving family. But I love how EASY and fast it is to put together. But since I’m taking it for a large group of people, I use 4 cans of corn and extra of all the ingredients. Thank you for this simple fast and easy recipe, I love it!

Hi Leslie, I made the Frito Corn Salad on Sunday past ( we had out of state family here) this Frito Corn Salad rocked! It was so good! It was a nice break from potato salad, don’t get me wrong I love making potato salad but this was yummy! Also I went to California to visit my daughter in March for 5 weeks and made your Fire Cracker they loved them and they ask if I could make two more batches for their co-workers so I did and they both said those crackers were gone by the afternoon❤️ Thank you so much for great recipes!

I changed mine up a cpl notches. I roasted 4 ears of corn on the grill, I added 1 jalapeños, black beans & then added a cpl tsps of chili powder to the mayo. And added a 1/2 tsp of smoked paprika. It was amazing

I made this the other night and it was amazing. I did make a couple of changes though. I used the southwest corn that has the peppers already in it and had some leftover grilled corn on the cob that I cut off the cob and used in it as well. Thanks for sharing this recipe!

I made this for my dinner after watching your vidro today, I added a little cilantro too. I added the fritos to my plate a then mixed it up on my plate. I don't like soggy fritos, so I thought just add it to your own portion, and they stayed crunchy! It was pretty darn good and nice on a hot day too. Thanks for sharing🙂
