I would check out 49drangonflies. She did this exact thing years ago and even has a complete playlist on how to go from selecting a book to the final project.
I like making my altered books using books that have signatures. My process: When I find a signature I paperclip the two pages. I will go through the entire book looking for all of the signatures. I can start where ever I want because all is equal now. I usually start at the first signature and I will glue the two pages that visually show the thread. These two pages get glued. I prefer this method because the signature is still anchored to the spine. Gluing the two pages together will get a firmness for what I will do such as make a pocket, etc. Now, I start tearing pages out because for every paper I add, a page needs to be taken out, or close to that for the book to close. So, I start at the glued pages. I tear out a page from the left and then to the right. If I've lined everything up right, the second page will just slip out. Now, I usually will tear four on each side knowing I will add bulk, so I'll have plenty of room. So I tear four on the left and four on the right. I go to the next signature and do the same thing. Now, you know how many pages are left in between the two signatures. With the leftover pages I will add a something to glue on for journaling. It's easy once you've found the signatures and consider how much bulk you'll add. When I'm looking at a candidate book, I open it up and find the signatures. If I can't find them and know it's a glued spine, I don't buy the book. Usually I can find a few when I'm out looking.
