I have been watching your videos for a few years now and just love them. Your style of cooking (and humor) is so great, "I'm doing this buuuut it would be better this way but this will work too". I cant think of any other food channel who is so very honest with their substitutions or mistakes and shortcuts as you. As a mom who loves to cook but doesn't have time to get finicky about each and every recipe it truly is nice to see someone so successful take a short cut here and there. I'm binge watching again so I'm not sure if this episode reflects that but.. :) I just wanted to say, Thanks for being an inspiration.

I have a food wish. Can you make a series where you teach some cooking basics? It can be from knife skills to what spices are used. I personally would like to know more about creating a roux and about browning meat and making sure it ends up cooked fully through. And I would also like to learn about emulsification. Regardless I really enjoy your videos, and also the quick jokes you sneak it make it that much better.
I can't wait to try this! The onion and bacon dip I've been getting from the grocery store has been just alright. I think this recipe will blow it out of the water.

I made it as written with one exception. I added about 2 tbsp of drained clam juice. It was great. I spread some of it on a thin crust veggy pizza. Damn that was good. I will be making this again. Going to try to make the Philly cheese steak dip next week.

This looks good, although I don't like clams, however I feel like this would work equally well with some finely chopped chicken breast (pre-cooked naturally).
Chef John, I wanted to tell you that we have made this dip for over 50 years in my family…. Although yours is much better and much more fancy…. This is our favorite dip for every holiday get together…. Ours has always been super simple… 2 -cans of Campbell’s condensed clam chowder… do not add milk or water… 2-8 oz of cream cheese -A couple of slashes of Worcestershire sauce -A few tablespoons of minced dehydrated onions-rehydrated for 10 minutes in hot water -2 cans of minced clams, reserve a little bit of the liquid to add extra flavor to the dip… freeze the rest of the liquid for when you make homemade clam chowder or other soups! Add all ingredients to a pan and heat to simmering. Serve hot with lays ruffle chips (our favorite) and also sourdough bread…. This dip was a huge hit in the 1970’s when I was a child… Much love to all from Oregon 🌲🌲❤❤
For the record, Philadelphia Cream Cheese is not from philly. The name comes from the fact that in the 1880's, philly was like the center for super high quality dairy products in the states. Its actually from NY, originally.

What type of cheese grater do you use? I love how the cheese is short and curled.
Why DRAIN the clams? I would think you would want all of that flavor from the juice if you are after that clam chowder flavor.
