    Ingredients:
    1 cup Spanish rice

    1 bell pepper, chopped
    2 cups water
    1 or 2 chicken bouillon cubes (adjust according to taste)
    1 teaspoon tomato paste / or 2-3 tablespoons tomato sauce
    1 teaspoon ground cumin
    1 teaspoon paprika
    Salt and pepper to taste
    Chopped fresh cilantro or parsley for garnish (optional)
    Instructions:
    Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
    Add the minced garlic and chopped bell pepper to the skillet, and cook for an additional 2 minutes until fragrant.
    Stir in the Spanish rice and cook, stirring frequently, until the rice is lightly toasted and golden brown, about 3-4 minutes.
    In a separate pot, bring 2 cups of water to a boil. Dissolve the chicken bouillon cubes or powder in the boiling water, stirring until fully dissolved.
    Pour the chicken bouillon mixture into the skillet with the rice and vegetables. Add the tomato paste, ground cumin, paprika, salt, and pepper, stirring to combine.
