Cucumber Kimchi (Oi Sobagi) Recipe - crispy, crunchy, spicy, and tangy

I love Maangchi and her delicious korean recipes. My favorite of her recipes is always her kimchi. Today, I made some Oi Sobagi (오이소박이) which is a kimchi made with cucumber instead of the usual napa cabbage. My grandma would always make oi sobagi, so this dish is very dear to me because I am always reminded of her when I eat this kimchi.
I used Maangchi's recipe and doubled it:

Ingredients:
4 pounds cucumbers
salt
2 bunches buchu (asian chives)
8 garlic cloves
2 medium carrots
1.5 onion
1 cup Korean red pepper flakes (gochugaru)
6 tablespoon fish sauce
2 tablespoon sugar
1/2 cup water

Maangchi is great. One of my favorite kimchi's is kkakdugi made from radish. i'll have to try this one.
I havent made her kkakdugi recipe yet. Definitely writing it down as a must try.
I did make her Chonggak-kimchi recipe and loved it!

Also, how long do these Cucumber Kimchi last in the fridge and how long does it take for you to finish them all lol
Thank you! I would say, it's best to consume within a week or so. But I have had times when I have eaten them way longer than that. They get a lot more fermented/sour and lose their crispiness as time goes on.
As for how long it takes to finish, not that long! haha I share them with my family and friends by packing them into smaller containers and giving them away.
The hardest part of making this is having to wait a few days to eat it lol

I didn't notice the tripod till you mentioned it lol I was wondering if the pretty cucumber was going to split on you during the stuffing. Can I ask, was salting the cucumbers for flavour or to strip the moisture from them? I got confused when you washed the salt out, because I thought you were trying to get the water content out of it. I'd love the clarification if you can provide it, you're also really good at art! Happy to have discovered your channel
Hmm I believe its for both? Every kimchi recipe I have seen (or most) include the process of rinsing off the excess salt. I believe it is to prevent the kimchi from being too salty since other salty ingredients are usually added later such as fish sauce and fermented shrimp. The salt works as a natural brine, seasoning it while pulling out the moisture which slows down the softening of the vegetables (keeping them crunchy longer!). Since the vegetables are usually not porous, I don't think washing the salt out adds the moisture back in (or if it does, it does very minimally). But Im not a professional and since we're talking about salt, take what Im saying with a grain of salt. hahaha. Thanks!

Could I use soy sauce instead of fish sauce?
I’ve never tried replacing fish sauce with soy sauce so Im not sure.

To get rid of the garlic smell, rub your fingers on something stainless steel, like your tap.
