I love extra fluffy pancakes!! Feel free to substitute the milk with buttermilk for a more sour pancake!!
Maple whipped butter
8oz unsalted butter room temp
2 tbsp whole milk
1/4 cup maple syrup
Pinch of Maldon salt
Pancakes
2 cups flour
1 1\2 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon Maldon salt
1/2 tsp vanilla extract
2 cups whole milk (or buttermilk)
2 eggs separated
2 tablespoons unsalted melted butter

Letting the batter ‘rest’ for 15-30 minutes also creates fluffier pancakes. These look really good!

Add some cinnamon to the dry ingredients and then drop in some blueberries when you pour the pancake into the pan. Maple butter and syrup will go perfectly with this. Yum.

12 years ago, I would beat my fridge all the time. The reason I subbed is because I can relate to him haha. My fridge was solid though. An old one from the 80's. It hurt me more than I hurt it.

Can everybody shut up about the fridge? Like you’re special when you point out that he hits the fridge. Nice work realizing that. Thank god everybody is pointing it out or i would have COMPLETELY missed out and wouldn’t have been informed. Would anybody like to add to the recipe maybe? Maybe comment about the ingredients used? Something constructive instead and somewhat intelligent rather than pointing out the obvious and looking for “likes” to make yourself feel important? That would be a nice change

My mans on point with the vanilla in there. Learnt that from an older lady at a small place i worked called "nanas buffett" never heard of it or tried it before she showed me. If ya know ya know
If you use the same technique of separating the eggs from the whites on ready-made pancake mix you get pretty good results. I was told the fat in the yolk binds to the flour and then adding the fluffy whites lightens everything. It really is a solid technique.

To anyone who was wondering, after making the batter do not let it sit or it will lose fluffiness and will not cook well. And over mixing it caused an issue also. I also messed up the sugar amount so it was like vanilla and nutmeg flavored frisbees.
